Hi, i'm from Mallorca (Spain), original place of Ensaimada that you see in Bob's. I'm happy you like it! The original ones don't have melted cheese, insted we just put some powdered sugar on top ^^

Oh my gosh! That's my hometown and I feel that our cuisine is so underrated but it is so so so damn good!!! Not only the desserts are amazing because we are the sugar bowl capital of the Philippines, but we have so so so so many amazing other dishes as well. That achiote (atsuete) is also called annatto seed is so so crucial and so delicious. Chicken oil is a must when having chicken inasal. Yum!!! Also, thank you for saying Bacolod right. I miss my hometown. Thanks Luke. Cheers and take care

I absolutely believe it. Even here in the US the chickens that you get from small farms out in the country are way better than any other. And each family raises different breeds, and there are different subtle flavors to each type of chicken. They are always smaller than grocery store chickens and less fatty, but the fat they do have tastes entirely different than mass produced chickens. No steroids or forced antibiotics make a huge difference just as the breed of chicken. All the big farms that produce for Tyson, Purdue and the like use the same “generic” white chickens.
