I think I'm going to use silicone muffin cups to freeze the skinny milk chocolate in then once frozen pop out and put in freezer bags and it would be so easy to grab and go from the freezer.

I bought the Kindle version of one of their cookbooks last night, and all my hopes and dreams were in there. Like, real recipes for families, not foie gras with truffle oil and escargot on the side 🤣🤣 I love the healthy suggestions on how to add stuff in for growing kiddos. I also love how they give you frugal suggestions in there for substitutes for their products (I'd love to buy all their brand products, but my budget being what it is, it's not always possible). They seem like real people raising real families trying to help real people like me, and I really appreciate that!!! Thank you for inspiring me to jump on in after some initial hesitation. You go, Mama!!!

Jamerrill, you are the only person I know who would be discussing taking a knife skills class while still processing the worst trauma of your life. Your knife skills are Just Fine. I've worked in numerous professional kitchens and the only places that care if the carrots are in a perfect dice are those charging 100 bucks a plate, and even then, don't tell anyone, they often get their carrots frozen and already cubed. So, that's "whatever"-your people are being fed, the food looks and tastes good, and that's all that matters. I am praying for you to get to a place where you don't have to be so darned strong all the time. It's good that you are, though. But seriously, KNIFE SKILLS? Surreal! Peace to your heart, Ma'am.

I have used eggplant in place of pasta in lasagna noodles, just cut the eggplant into thin slices horizontally and salt them to draw any excess moisture from it and rinse afterwards to get rid of the salt.its delicious and healthy.

Wonderful video! Everything about your life has changed, I know you are the only income in this family. You have always been! The chef, teacher of home school, the planner of trips, the mother, the friend to your children, and have had to be strong in all things. Life is different, an at times difficult. I have found that a small metal can opener works best on removing canning lids. Ya know, the kind that has a pointy end and a rounded end. About 3 or 4 inches long.

Does your container of baking powder have a leveller.... that you may not be taking advantage of? When you are scooping out of it, it's always sped up, so I can't tell. When I open up mine, I go out of my way to leave a bit of the paper or plastic/metal safety seal with a straight edge so i can use it to level my scoops. Those waffles in particular look amazing. May need to give them a try.

Waffles... I use a fork to lift the edge and either have a flat plate or large (grill size) spatula to lift and pull away. Or hot potato it like you have been doing 😂

The lasagna looks really good. I would do chopped mushrooms instead of the hamburger meat for myself and make another with the meat for the rest of the family. ❤I'm gonna put it on my next meal plan.
