A restaurant with a friendly atmosphere, dishes that seem appetizing. It has improved a lot, in the 80's and 90's there were fake gourmet restaurants where we mostly had the chance to get ripped off, I lived in France and while visiting Finland I had been in a "French restaurant" in Helsinki, a scam, My mother was a cook and she would not have dared to serve what at the time the false French restaurant dared to serve us, the school canteen would have been better, the chef was French but did not have never cooked before the restaurant opens.

Are you really talking about the restaurant Elite in Helsinki? I didn't know I has tried to be an French restaurant or have French kitchen. It is an old restaurant, which is promising to be Finnish and not French. It is possible, since some restaurants tend to change their styles to stay competitive and interesting. But I doubt that Elite is in that group. Some have stable business having enough regular clients, so they don't dare to make big changes. It has a history and reputation of having been the place for artists. It could be that at some phase in history French kitchen was considered to be the same as fine dining. That was a long time ago.

@@just42tube I'm talking about another restaurant in Helsinki, 1992. The owners had looked for a French chef, unfortunately they did not verified the skills of the "chef", the restaurant was called "chez Paul" or "chez Pierre", His dishes would have earned him a popular revolt in France, no French cook will have cooked so badly, he was a Frenchman but who had no knowledge of cooking, not an amateur cook who wants to do well, but a profiteer who has abused the owners and made no effort. Many fake French chefs have plagued the world by surfing the fashion of French gastronomy. This one did not expect to have 2 real French cooks as customers. After talking to him he confessed everything, he had cleaned 3 Parisian restaurants but had never cooked, this is how he was able to be hired as a chef, presenting these 3 restaurants as a professional benchmark..

@@ButterFly-zh8ho If you know restaurant business, you must know that some part of it is notorious for many reasons. Low pay, long hours, illegal work conditions, illegal workforce, accounting offences... Having incompetent cheffs or cooks goes to that context well.

@@just42tube There are some very good French cooks and restaurants where the staff are treated well, well paid, without being prohibitively expensive. I have known chefs in France and Finland, my mother was in France, I also cooked but on construction sites and events.

@@ButterFly-zh8ho I don't try to disagree. I just like to remind that French kitchens have the reputation of being highly hierarchical. That is in some ways in conflict with good working environment from a more Finnish perspective.
