Chef Klein takes us from hitting the right temp after the sear. While the steak rest, he walks through the steps in cooking seared foie gras. We recommend viewing this video a couple of times before you begin your process, so you can "give some love" to your own home preparation.
In addition, foie gras is a delicate ingredient that is very sensitive to temperature and can "melt". Learn what to look for and prepare yourself in advance, as once the foie is complete, you will move right into plating the Tournedos Rossini.

I had this dish for the first time in August 1985 in a restaurant in Haworth (home to the Bronte sisters) when I was on honeymoon. You KNOW a dish is special when you remember where and when you first had it. Thank you for this wonderful demonstration!

DUDE, huge fan after seeing your kitchen set up w the heat lamp and the French utensils bam Marie AND that entire suite of mauviel copper pans/pots it’s my dream set up when I finally earn my keep to refurbish my kitchen. Until then, hope to catch more videos from your kitchen pls keep filming. It’s beautiful watching those utensils put to great use with skill and care!

Well ,when you cook 🍳 the beef ,maybe an idea to cook with butter ,thyme ,1 teeth garlic amd arrose a lot the beef according the French method of cooking the beef .

I can tell you can cook but this is a how to butcher a french classic tutorial, you didn't respect the original but that's ok, you did it your way. Fuck 2020 and 2021 for sure. I will subscribe because of your passion. I'm a nobody, so my negative review is nothing compared to all the positive reviews you got. Enjoy life, cause It's short.
