Chilli & ginger salmon + coconut spinach rice (serves 2)
Coconut spinach rice:
200g white basmati
1 garlic clove
125g baby spinach
150ml coconut milk
150ml water

1 inch thumb ginger
1 tsp honey

2 tbsp. soy sauce or tamari
1/4 tsp chilli
