KAREN'S REFIGERATOR DILL PICKLES
A yummy recipe, my "go-to" refrigerator pickle recipe. You can slice very thin to use on burgers or sandwiches. Slice thicker for thick rounds, quarter for spears.
Amount of cucumbers will depend on your garden out-put and the amount of garlic and dill will depend on your personal choice. Sometimes I use more and sometimes I use less, just to mix it up. If you like spicy add more red pepper flakes. If you don't like spice, you can leave it out.
The little bit of sugar in the brine mellows out the tanginess of the vinegar without turning into a "sweet" pickle.
If you have left-over brine, I've saved in a sterilized jar in the fridge for a few days and then reboiled and cooled for the next batch.
pickling cucumbers
minced garlic
fresh dill
2 quarts water
1 cup vinegar
1/3 cup canning salt
1/4 cup sugar
crushed red pepper (optional)
Quarter or slice cucumbers. (Washed and blossom end trimmed off)
In large pan or pot - add water, vinegar, canning salt and sugar. Bring to a boil and then cool.
In large (sterilized) canning jars, place 2 Tablespoons of garlic, a few springs of dill and a couple of shakes of red pepper flakes (optional) in each jar.
Pack jars with cucumbers. Pour boiled and cooled brine over to fill each jar ( leave 1/2" head space).
Cap with sterilized lids and bands, refrigerate for 3-4 days before eating.
Will keep in refrigerator for several months.
