That looks a lot like our Kerala porotta or parotta. That one takes a bit more of oil and is a bit more elaborate. They are flaky and layered.

It is the same thing. It's still called prata in neighboring Singapore. Our cousins in Malaysia north of us just called it canai. Canai is a local Malay word, maybe that made it more popular in Malaysia

Paratha is sometimes more crisper than roti. I eat Indian, Pakistan and Afghan food and know Paratha is slightly different to how we Jamaicans do the roti. Also we can use curry powders to flavour our roti too and obviously Indian curry powder is a completely different taste too.

I am from the beautiful twin Republic of Trinidad and Tobago 🇹🇹 😍 ❤️ On our Islands we have a beautiful mix of so many cultures and this roti that you made came from our Indian culture and it locally called 'buss-up-shot' or 'paratha' ( because it looks like a torn shirt and 'shot' is our local dialect pronounciation for 'shirt') It's very popular and an inexpensive dish ..its also eaten with curry and for the health conscious we also do whole wheat roti. The original roti canai is staple breakfast in the Malay kitchen in Malaysia before the parata being named as roti canai too. The original roti canai is multilayered and very flaky. The dough is pulled down as long as possible on a small round table to make it as thin as possible. It is crispier than the parata.

I was born in Trinidad in the 50's. In those days this roti was called paratha. Only in the 70's people started referring to this delicate process as buss up shot. I do not call it the latter because I think this roti is too delicious and refined to be called buss up shot. Trinidad has a lot of unique dishes like peleau, souse, macaroni pie, curried goat and other dishes. Depends on who you are talking to, their number one delicacy is different; however, paratha roti is quite popular. As far as I can see here, Phil is sharing a method. I believe her process is perfect. Call it what you may. To each his own.

We call this petai parotta in India which means beaten bread. We give a few spoons of oil or melted butter while kneading the dough. Milk can be used instead of water. Milk makes the roti more soft. A pinch of salt and sugar can be mixed with the flour before kneading. You have made the parottas beautifully.

We here in Bangalore also make this layered paratha from wheat flour. We use warm milk (or warm water) to mix the dough. For smearing we use ghee (clarified butter). But these are details. Your method and techniques are just fine too. I particularly liked the second technique. I have observed that so many foods are similar between India and Kenya and to me it is very interesting.
