Please do we register for customary marriage and also court registration, or we also chose one and register

If you have done court registration then you don't need to register the customary marriage. If a person only performs the customary marriage, that person can register the customary marriage. I am not sure there is customary marriage in the court. But yes, you can do customary marriage and later do ordinance marriage.

Is it possible to have a traditional wedding without engaging in these court processes? However, in case of issues, can the court preside over divorce matters similar to its involvement in civil ordinances?

Yes please. You can go through a customary marriage and even get a certificate without any court processes. And the court can still preside over matters concerning such marriages.

Can you register your Customary marriage to civil marriage if both spouses are not in Ghana..but their parents and siblings are in Ghana

You can register the customary marriage and get a certificate for customary marriage. But you cannot convert the customary marriage to civil marriage (ordinance) without your presence in Ghana.
