Eggplant
eggs
salt and pepper
garlic powder
bread crumbs (seasoned)
corn meal
sauce
cheddar cheese grated
mozzarella cheese grated
parmesan cheese

This looks yummy. I love lots of cheese any kind of cheese and yes eggplant too .

I do an eggplant rollatine which my father in law who was born and raised in Italy just called stuffed eggplant. It is delicious and I tested it two years ago for freezing and it was great. We have one or two "Eggplant Days" which my daughters have come to complain about for days but the all enjoy the proceeds and they have fun. I will also freeze just breaded eggplant to be used however you want in addition to stuffed and eggplant parm. I do peel my eggplant, the way I was taught and I prefer it that way even though it is another step and we don't use cheddar. It is a full day or two in the kitchen depending on the harvest.

I'm in a townhouse as well. With a family of 6 and next to no counter space for meal prep it is really hard. In the nice weather and if it's not too hot or humid I claim my backyard for food prep.

How many degree celsius and how long do you put the tray in the oven? Do you need to thaw it first or do you put it into the oven straight from the freezer? Thank you.

171.1 degree Celsius. I’ve done both. I’ve cooked it frozen and thawed. Frozen I cook for a little over an hour. Thawed I cook till heated through and the cheese is bubbly.
