I’ve never heard of Pastis before. But it’s a brilliant idea, as a substitute for Absinthe.

That's not exactly true it's a medicinal digestif in its own right absinthe having a few things in there that have a different flavour note, but the ban was the point it thrived and appeared commercially vs the home/illegal distillers.

Shouldn't they be dripping over ice in a cup over a sugar spoon js.... Been to very gd places not a expert

Depends where you are, over sugar is parisian, simple louche is the traditional method for rural France where it was made, Czech tradition has the sugar flamed before extinguished and the water/club soda used louches it. It's personal taste really, I find a lot of modern pastis too sweet to add sugar to it.
