Chicken Fricassee Recipe
6 chicken thighs skin-on-bone-in
Salt to taste
Ground black pepper to taste
5 tbsp butter
16oz mushrooms
1 medium onion
3 tbsp flour all-purpose
2 garlic cloves finely chopped
2 thyme sprigs
1 bay
1/2 cup white wine
2/3 cup heavy cream
4 cups chicken stock
2 tbsp Worcestershire sauce
Parsley chopped
Season the chicken with salt and pepper.
Add butter to a skillet and brown the chicken on all sides. About 3-5 minutes on each side.
Remove the chicken, place it on a plate, and set it aside.
Using the same skillet add onions, and mushrooms and combine. Cook for about 5 minutes
Add the thyme, and bay leaves and combine.
Add the garlic and combine for about 30 seconds before adding the flour. Cook the flour for about 1 minute.
Add the white wine, and chicken broth and combine.
Re-add the chicken to the pan and cook covered for 10 minutes on medium-low.
Remove the lid, and cook uncovered for 20 minutes or until the chicken is thoroughly cooked.
Add additional liquid if necessary to cook the chicken thoroughly.
Garnish with fresh parsley.
