Steel or stainless wok gives u the nice charred results but it can sticks rather easily if not careful. I would say between 30-32cm is good size for frying fish. Golden pomfret can be deep fried too.
@@CookingAhPa you always deserve it. Sorry i don't have ability to comment in Chinese from laptop. it would be good practice. i seek help talking / writing with someone in Chinese Mandarin, Cantonese also ok, just written. But i have no luck.
