Alertness and quick motion are the trick to frying runny eggs. Practice makes perfect!
Step 1
Prepare diced green onions and 6 eggs.
Step 2
Separate egg yolks from whites, whisk egg yolks, add egg whites and fish sauce and combine gently.
Step 3
Add oil to heated wok, fry green onions, add egg mixture and stir fry.
Step 4
Continue to fry eggs scraping from the bottom, fry until eggs are still runny, ready to serve.
