as a glassblower i really appreciate not just this mans speed, but his precision and economy of motion. not a single wasted calorie. every last millimeter of movement full of purpose and utility. absolutely master level.
Not an easy job with his arms and wrist cooking, expose in heat in his entire shift. My respect to all those cook who put love & passion in their cooking 🫡

I wish I knew all the ingredients he was using. That fried rice looked like the type of fried rice I loved that I use to get at the Kim's Chinese restaurant in Medford Oregon before it closed. I'm sure I couldn't cook it anywhere close to as good as this chef, but I would still love to make it as best as I could at home. I haven't had it for decades now I think. Awesome video! 👏😎
I used to layover in Medford on my drive from Seattle to San Diego back in the 80's and I used always stay at the Best Western hotel just block off of the 5 freeway (can remember what street) and eat at a Chinese food restaurant a mile or two away from the hotel. I wonder if it is the same one that you are talking about in your post. Loved southern Oregon. Medford, Ashland, Grants Pass and driving on into No California. I was a in the Navy stationed in Bremerton WA but originally from San Diego. Used to make that trip every other month for 3 years. The Navy had a flight that left every Friday to San Diego and came back every Sunday. Only had room for about 150 people and that flight was full every weekend. Great memories. Medford had changed a lot last time I was there in 2010.

Im actually fascinated how easily the egg and rice come together to make one of my top 3 fave meals. Hard between Irish beef stew, Fried Rice or Japanese Curry
Even as being so white that I think salt and pepper is spicy. I do love egg fried rice.. It's great to make with leftovers. And adding stuff like shredded chicken and such is a nice way to get leftovers into a nice meal.
