garlic bread / star bread ingredients:
dough:
yeast: 2g 1/2 teaspoon
room temperature water:200g 1/2 cup+1/3 cup
bread flour:200g 1+1/3 cup
durum flour:100g 2/3 cup
sugar:12g 1 tablespoons
salt:2g 1/4 teaspoon
oil:24g 2 tablespoons
filling:
a head of garlic
green onion 1
unsalted butter:50g 1/4 cup
salt:4g 1/2 teaspoon
1. mix all dough ingredients and knead it into a dough, then rest for 20 minutes
2. after 20 minutes knead it for 1 minute
3. continue to ferment for 1.5-2 hours
4. cook garlic and green onion with butter on low heat for 5 minutes
5. shape the bread
6. final proof for 45-60 minutes
7. preheated oven, 205°C/400°F bake for 25-28 minutes

做了两次都很喜欢~!不过我是用100g的全麦面粉代替durum面粉的,这种情况下200ml的水会太多,我调整到160g就大概刚好~另外在面粉里加完糖和盐之后最好把干粉混合均匀之后再加油,要不糖就会被油包住而混合不均匀(血的教训。。。) ;p

I like your recipe very much. I have cooked three times and my australian husband likes very much. He also mentioned to his friend how nice the chinese garlic bread i made. 刚动手做了,现在在享受自己的劳动成果,太香了!!! 面粉我都用的高筋面粉,水加完进去稍微有点粘手,醒了二十分钟发现太粘,只好再让面团冷静十分钟,结果还是粘,只能沾点面粉揉啦~ 其他都一样,过程很顺利,吃了午餐开始做正好赶上晚餐😍😍 感谢小高姐的食谱❤

Thank you for sharing this recipe, I made it twice already and it's perfect and delicius! This last time I used 90 gr of levain (adjusted - 45grs flour and - 45grs water = more fermentation time) and it worked just the same!

今天跟着做了,方子很棒! 我的面粉吸水性高面团很软很黏所以又多加了差不多100g的面粉,炒蒜蓉酱忘记放盐。。吃的时候才发现,后来撒了盐,味道超棒~

My family and I loved this bread. Came out very fluffy and the garlic isn't overpowering at all. The only thing that needed changing was the quantity of the water. Needed much less for me. I had to do it twice, the first dough came out too wet, the 2nd time came out perfect. Many thanks for sharing this deliciousness!
