Amy, I actually do my chicken, beef and a pork shoulder like this ( shredded) once every so often and am able to get so many quick meals using not only the meats but the broth too. I freeze my broth because I no longer can. But I really enjoy doing this for all types of meals. You don’t realize how many different ways you can use shredded chicken, beef and pork. Of course they’re not the only things I eat but I call them my quick meal meats. I hope more people try this because of your video. Have a fantastic weekend.

I don't know if anyone has mentioned this to you previously but it was taught to me recently and it made a HUGE difference for shredding chicken... using the hand mixer shreds it SO beautifully. Just thought it might be useful to you. :)

Hi Amy - a lovely way to serve beets is to either roast or boil them, remove the skins, then toss them while still hot, in sour cream with added tarragon or chives. Lovely served with rotisserie chicken as a very simple, lower carb meal. I have them with fish but know you are unable to eat fish. Do try it! They don't have to be eaten cold or doused with vinegar!

I scrub them and roast them with olive oil, salt and pepper and then eat them with the skins on. I keep the skins for fibre and there’s no mess. I always get stains everywhere, otherwise. 🤷‍♀️

@@tenthousanddaysofgratitude sadly, where I grow them, there are too many imperfections in the outer layer to be able to leave the skins on. I DO eat the leaves - they are a delicious addition to a salad and perfect when lettuce isn't so freely available. I am in New Zealand and the cost of living here is sky high - paying over $7NZ for a small head of lettuce or $11NZ for a cabbage . . . if we don't grow what we can, we don't have it. Thank God that we have a small series of gardens that we can plant and reap the rewards, and free ranging hens to share and barter the eggs from!

My goal for this month is to use as much as I can from the pantry so to rotate stock but I am also watching for deals to replenish if needed. At times I feel like I am tethered to my kitchen ( and I dont have a large family) but still feel that way. So I started a finger foods night once a week, like meats/cheeses board or cocktail wienies things like that just to lighten my load in the kitchen, so far the family is most excited about that night more than any other 😁😁 With caring for my parents for the past 3 years and my family I find there is no time for me so I need to find shortcuts to get to my goal of taking care of myself! I just made some boxed mac n cheese for myself, and took frozen shredded chicken out. I had been given a huge bag of frozen chicken that didn't fit in my freezer so I IP'd as much as I could fit, then put the rest in smaller freezer bags. Once done, deboned and shred and was so much, I froze half. I was flying by the seat of my pants, having never done this and not a cook. But I did it bc I have been watching you, Jamerrill, Becky, Christine and Mindy! You all gave me the confidence I need. These little things you do, can impact others in many ways. THANK YOU! 💕 P.S. I think teriyaki or pulled chicken would be yummy!

Angel Bis… I haven’t had or heard anyone else talk about these. My Great Granny Smith used to make them. Oh they were sooo good! I have always regretted not watching and learning the recipe. Things we don’t think of when we are young. She did however teach me how to make cornbread in a cast iron pan. She said if it wasn’t made in a cast iron pan it wasn’t cornbread. Yeah gotta love the south 🤣 I can not wait and pray u share your recipe.

I make my bone broth with some chicken feet as well as a whole chicken . Some apple cider vinegar and carrots onions celery . It’s so good . S and P plus some fresh herbs xxx it’s gelatinous but so good x

My favorite way to cook chicken legs is to put them on a sheet pan and cook them at 420 until the skin gets brown and crispy. Then I use bbq sauce or franks red hot wing sauce. Basically I cook them like wings. They have enough fatty skin that they get a fried texture if you bake them hot enough. I call them hot legs instead of hot wings. I also bake them just covered in bbq sauce.

I have seen where some put the paddle attachment on their mixers to shred chicken. I’ve never done it, but it would probably be nice if you had a lot to shred.

Hi Amy, I hope your having a great day! You know, I love chicken but I have such a hard time with it. I can cook it just fine, but handling it, preparing it not so easy. Also, one of my biggest issues I have with it is defrosting it. I will take it out of the freezer then put in the fridge to defrost. It's when I get it out of the fridge after it's thawed I'm always afraid it's bad. Either because it smells weird, or I'm afraid I left it in the fridge too long and it's bad. I throw it away then. Such a waste!! If only I could prepare it the day I purchase it I would be set..it never works out that way. Lol I'm ashamed to say how much chicken I've wasted..MONEY I've thrown in the garbage. I don't have many things I can eat the way it is, chicken being a staple..I have much to think about. Sets me silly! I like how you just did your chicken here, it would be a win win. Cook it all up, cook the bones, cut up the chicken then freeze the good flavorful jucy cut up chicken, there ya go. I need to plan my chicken cooking days better. :) XO Someone a long time ago has made me afraid of getting salmonella. My sister did get it on an airplane yrs ago, could be. A fear that I need to pray about and over come. Take care my beautiful friend..love ya to pieces 🌻

Oh my, Mary. I’m glad I’m not the only one. You talking about thawing chicken is 100% me. But for me it’s not only chicken though … I go through the same thing with pork chops too!! I’m so scared it went bad because like you said they have a funky smell and I trash it. I tell myself every time that was such a waste of food and money. Who knows maybe it’s supposed to have a little smell? Surely between me and you all of our chicken can’t be bad after we thaw it out haha. Although, I may put it in the freezer too late. When I buy it I always put it in the fridge thinking I’ll cook it in a day or two buuuut I don’t. So by the end of the 2nd or 3rd day I put it in the freezer. Maybe that’s my problem? … it may already be going bad before I freeze it? 🤷‍♀️🤦‍♀️

Pepitas. That’s Spanish for pumpkin seeds. Yum yum! I also like beets in my salad. That looks delish! It’s called Gather-Your-Fragments-Salad! Most of my salads are a gathering of fragments. Never the same twice. I’m doing the same thing with my freezer and pantry. I window shop the flyers, too. If there’s a great deal, I will buy it and put it away, but I am only buying salad fixings, milk and bread, generally. I have a garden so I’m eating a lot of preserved summer vegetables. Got to get my freezer cleared for 2023 harvest! Enjoy the weekend!

Keep ur chicken bones. I cook mine for 12 hours, for rich bone broth. I would love to cook overnight. But hubby wouldn’t be able to sleep..lol Mix bbq sauce with ur dark meat for sandwiches.

No shame in giving the chicken that would have been wasted to the animals. You are saving some money on buying animal food because this will stretch what animal food you have just like the free meat saved on human food by stretching it. I’m sure the animals were thrilled to get this treat! I could tell Maxine was ready for hers. It was hilarious that she was trying to jump to where the food was she was smelling. 😊
