Make green tomato relish! We grew up eating it. My mom used all the green tomatoes, after canning 300 quarts of tomatoes to feed our family of 12, (9 kids, mom and dad, and nanny, our great grandma, who moved in after breaking her hip). It delicious on scrambled eggs, or fried potatoes, scrambled eggs, spam, cheddar cheese bake. That egg bake is delicious made over a camp fire, in a large cast iron pan! When it comes to cinnamon and many other spices I don’t think the expiration date means that much. I can tell if they’re at all still potent by their smell, and I haven’t ever had any problems using this approach.
I don’t worry about expiration dates either. And I like cinnamon way better than nutmeg and use more than the recipes say to. Beautiful property! I’d like to see a video on how you bake with kamut. I think the biscuits could have been rolled out a little too thin, but they looked good! Jars usually break like that because there is too great of a temperature difference between what’s in the jar and the temp of the water in the canner.

Zeb should build your new table on this channel. I worked in the grocery department, and expiration dates can be extended out longer. The expiration date is just the date they are at their best. most containers that are sealed will be good for longer.
I'm with you on spice exp dates. I had ground cloves I used for 10 yrs. It always tasted like cloves. I have however started buying smaller sizes of spices.
The good news about spices is that they virtually last forever. It's rare, if not impossible, for a spice to go "bad." The biggest threat of time is that it causes spices to lose potency and flavor. Ground cinnamon that's three years old will not carry as much flavor as cinnamon that's only three months old.
Expiration dates just tell me that they are still at their peak. I just notice on herbs that they don't smell or taste as strong. I tried growing apples but in NC it is very hard to get apples that don't get diseases so I just switched to different fruit trees.
