Giant Gluten Free Chocolate Chip Cookies Inspired by Gideons Bakehouse
1 stick salted butter softened
1/2 cup dark brown sugar
1/4 cup white sugar
1 large egg
2 teaspoons vanilla paste or vanilla extract
1 1/2 cups gluten free flour (King Arthur GF measure for measure flour or similar )
1/3 cup almond flour
1/3 cup oat flour
3 tablespoons corn starch
1 teaspoon baking powder
1/8 teaspoon ground nutmeg
1/8 teaspoon ground cinnamon
1/2 cup semi sweet chocolate chips
1/2 cup milk chocolate chips
*1 additional cup of chocolate chips mixed for coating the tops of the cookie
Celtic sea salt to sprinkle over the cookies after baking
In a medium mixing bowl mix together your gluten free flour, almond flour, oat flour, corn starch, baking powder, nutmeg and cinnamon. Set aside. Cut your stick of soften butter in half. Set half of it aside. Place the other half a stick of butter In a small light colored saucepan. On medium heat brown half of your stick of butter. Stir constantly for approximately 5 minutes or until the butter starts to turn golden brown. Pour the melted butter into a large mixing bowl and stir to cool it down. After it has cooled down for about two to three minutes add the remaining half a stick of butter to the bowl of browned butter and mix until well combined. Add the brown sugar and white sugar to the butter and mix for three minutes on medium speed until light and fluffy. Add your egg and vanilla and mix for another minute. Add the dry ingredients to the wet ingredients and stir until just combined. Stir in your 1/2 cup of semi sweet chocolate chips and 1/2 cup of milk chocolate chips to the bowl until combined. Using a scale measure your dough into 6oz balls ( this recipe makes for 5 cookies). Coat the tops of the cookie dough balls with the remaining chocolate chips by pushing them into the bowl of chips. Making sure no chocolate chips are on the bottom of the cookie to prevent burning on the bottom of the pan. Place the cookie dough into a parchment lined container with cover. Place the container into the freezer for at least 24 hours. After 24 hours preheat your oven to 385 degrees. Place the frozen cookie dough balls onto a parchment lined cookie sheet and bake for 16 minutes or until the cookies start to turn light brown. Sprinkle the cookies with the sea salt then cool on the counter for one hour. Next place the cookies in the refrigerator for two hours. Place the cookies back on the counter for one hour before eating. Enjoy!
