This recipe I am showcasing TIGERNUT Flour high in fiber potassium this is not a NUT but a tubular like cassava
Recipe
1/3 Cup Organic Raw Coconut Sugar
1/3 Cup Black Strap Unsulphured Molasses
1/3 Cup Organic unrefined Virgin coconut Oil
1 tsp Pure Vanilla Extract
1 Flax Egg ( 1 T ground flax mixed with 3 T Filtered Water)
Mix all together until creamy
in a separate bowl mix and toss with a fork
1 cup Organic Tiger Nut Flour
1 Cup Cassava Flour
1 tsp Baking Soda
2 tsp Ground Ginger
2 tsp Ceylon Cinnamon
1/4 tsp + Ground Cloves
1/4 tsp Allspice
mix together until forms a large soft ball
split into 3 portions wrap in wax paper and chill (speed time by placing in freezer for 15 min then the frig for another 15 - 20 minutes)
Roll out the chilled dough between parchment paper
bake 350 for 11 - 13 minutes (depending on thickness) until you smell the delicious spices and the edges are slightly darker
top with an icing
1 cup of confectioners sugar sifted with 1 T Vanilla Almond milk
add a little more if necessary consistency that will spread without running- stir in a deep bowl
(increase the recipe for icing if needed) place in pastry bag , close off the top and chill
