Hi guys and welcome back to the channel. Today I propose my personal recipe to obtain an excellent Neapolitan-style pizza but with the use of exclusively gluten-free flours. I hope you like it, if so, please leave a like!
Two words about the drafting:
The gluten-free pizza dough is very different from the classic one because we are faced with a product that basically has the consistency of a pastry and as such, therefore, must be rolled out, gently squeezing without pushing outwards on the edges. The edges must be well shaped to obtain a compact and uniform disc. This is, in my opinion, the most delicate and important part to prepare an excellent pizza.
Regarding the filling:
In this phase it is important, to obtain a Neapolitan-like pizza, to always leave a border of about 1cm free of toppings, you can at most grease it a little with extra virgin olive oil.
INGREDIENTS (for a pizza of about 28cm in diameter)
100gr Rice Flour
25gr Corn starch
35gr Potato starch
5gr Xanthan Gum
132gr Water
2gr Sugar
3gr Salt
