There’s just something about a big breakfast with homemade pancakes. The flavor of these pancakes is great (not to mention the heavenly aroma that fills the house). This recipe is easy to make and honestly, almost impossible to ruin.
They are soft, fluffy, and flavorful...just the way pancakes should be. My favorite add-in is mini chocolate chips but, of course, the possibilities are endless. Enjoy!

HOMEMADE PANCAKE RECIPE gluten free
(makes 12 medium-sized pancakes using a 1/3 cup measure OR 16 small-sized pancakes using a 1/4 cup measure)
INGREDIENTS:
4 Tbsp. butter, melted and cooled
1 1/2 cup milk
4 Tbsp. white vinegar
2 cup white rice flour
1/2 cup cornstarch
1/2 cup tapioca flour
3 Tbsp. granulated sugar
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
2 egg
GETTING READY:
1. Set out griddle or pan (about 325 degrees griddle, or medium temp. pan)
2. Melt butter and set aside to cool
DIRECTIONS:
1. In a large mixing bowl, combine milk and vinegar. Set aside.
2. In a medium mixing bowl, stir or whisk together white rice flour, cornstarch, tapioca flour, sugar, baking powder, baking soda, and salt.
3. At this point, preheat your griddle to medium heat (or a little less than medium)
4. As soon as butter is cooled, whisk butter and egg into the milk/vinegar mix.
5. Add flour mixture into the milk mixture and whisk together.
6. Batter will be somewhat foamy…don’t worry this will help the pancakes to fluff up nicely
* At this point, I like to do one little tester pancake. If it is not as puffy as I prefer, I add a little more white rice flour (about 2 Tbsp. at a time), and whisk it in. Then I repeat test until happy :)
7. Pour batter onto griddle in desired amount.
8. Flip pancakes when the bottom is golden. They are done when center is cooked and bottom is golden.
9. Enjoy with gluten-free syrup!
** TIP When you are measuring out flours, DO NOT SCOOP FROM THE BAG...this would compact it and add more flour than called for. Instead, always spoon the flour into your measuring cup and level off with flat side of knife.**

i just made a pancake as bread Quick easy and it doesn't fall apart! i have done it for hamburgers too. I always have extra batter after making a batch. also i noticed if i let the batter ether sit a while or wait till the next day the pancakes turn out just like yours in the video, And your right you can't tell the difference from regular butter milk pancakes. They sure look good. I love pancakes, morning, noon, or night. I'm trying to cut back on the gluten because of Lupus. I've tried them with Almond flour, but done like the grainy consistency. These look great, cant wait to try.

i found you looking for pancakes i have had wheat allergies for close to a year now. it was tuff and scary at first. Not so much now. love your pancakes and how you make your videos! anything in the works for Bread? i have a couple recipes but always looking for a better one. Again Thank You!

same here, my granddad had coeliac (professional name for the allergy) and have had it all my life. I've gotten used to it but I'm starting to learn how to cook and love making gf pancakes but never knew how to make them fluffy/American style but now I do. :)

Good morning just found your recipe and tried it this morning, my pancakes weren't fluffy like your idk why I followed recipe bit they look like regular pancakes and they taste so good!! Just love these fluffy or not these are the best!! Tfs!!

I'm glad you like them! You can try adding a little bit more white rice flour (a couple Tbsp. or so at a time) and then do a tiny tester pancake. Repeat until you reach your perfect fluffiness :) Thanks for the nice comment!

GlutenFreeHabit mine didnt really come out. the batch was to runny. pancakes came out flat flat. do i just need to add a little more rice flour? or would brown rice flour work better?

I'm not sure why they came out flat, but yes, I would add a little bit more flour. You could use white rice flour...a tablespoon or two at a time, depending on how much more you want to thicken them. After mixing it in, just do a tiny tester on your griddle so see if you like the result...if not, add a little bit more. If you will be adding more than a couple of tablespoons though, I would add in equal ratio, the white rice flour, tapioca starch, and corn starch. (for example, one Tablespoon of each). Hope this helps!

Try folding your batter with a spatula, instead of whisking it with a... well whisk. You're trying to create layers and pockets of all the ingredients, not a homogeneous fluid. Clumps of flour and runny spots in equal portions. Like creating layers in a croissant or other pastries. Layers are better than homogeneous ingredients. This can be achieved with a wisk, but: - Don't whisk to the point your batter is liquid, stop earlier than you think you need to. - Still mix the dry and wet ingredients together, but only until they begin to clump together. - You don't want to undermix either, have some runny spots where everthing is homogenous, just not the whole batch. Hope this helps.

I followed your pancake recipe except I used brown rice instead of white rice. cuz.. I am out of white rice right now. then I added one and a half to one and three quarter teaspoon xanthan gum , close to, 2 Tbsp yeast. i let it rise in a 8X4 inch bread pan lined I didn't pay attention to the time i would say at lease a hour for it to rise. the dough was close to the top of the bread pan. baked at 375 in my toaster / convection oven for 50 minutes i set it to convection and i didn't preheat the oven. after about 15 minutes or so it was starting to brown so i tented the bread with foil. Note i slowly heated the vinegar and milk. added the sugar and yeast. you really don't get a foam and it looks funky. this is the first time i made it so i'm going to make adjustments. it tastes like bread soft and pliable it holds up better then other bread i have made in the past. this is a video i found to line my bread pan and to make the sides taller after i poor the batter in the pan i use toothpicks between the pan and the parchment paper for stability if the dough rises above the top of the pan. ru-vid.com/video/%D0%B2%D0%B8%D0%B4%D0%B5%D0%BE-0HwWRacG3rg.html thank you

There is a certain type of yeast that actually has gluten. But there is another without gluten. Both are used in factories that make chips and other such things. The people at the factories can't even tell which is which. So, warning to people who are allergic to gluten, if there is yeast in the ingredient list, it is best to steer clear unless it specifies which it is and you know which has no gluten.

No, don't worry. The milk is "soured" with the vinegar as a substitute for buttermilk...which most people don't usually have on hand. But once it is combined with all the other ingredients, all you will taste is yummy pancakes. Thanks for commenting!

I made them yesterday exactly the same recipe everything was perfect except that because the batter was so thick some pancakes were not cooked from inside even though they were perfect from the outside and I only use medium to low heat.

What is the purpose of vinegar in the recipe? Is there anything I can use to substitute?

The vinegar helps make the pancakes fluffy, and it gives them that little tang that is the hallmark to great pancakes. You can swap out the vinegar/milk mixture for buttermilk. I simply use the vinegar/milk combo because I don't always have buttermilk on hand. Thanks for asking!

I am a recent gluten free convert and have been reviewing many recipes to assist me, I have been noticing most recipes call for vinegar which is and ingredient not/hardly used in gluten diets, Is vinegar really necessary? why role does it play? can i avoid using it?

Im new about gluten free concept too. You can skip it's not necessary imo. Mostly in gf recipe use it because it act like traditional buttermilk as alternative for vegan, and not every store have bulky quantity of buttermilk.

And btw the vinegar necessary used if in recipe called baking soda. If u want avoid vinegar usage, just omit baking soda, and double the amount of baking powder. Hope you understand 😄

Brown rice flour didn't help. I had to add almond flour to it. And I use almond milk and white distilled vinegar so maybe that didn't help. They came out fine and thin.

Hi Amy G! The milk/vinegar combo is a substitute for buttermilk so it should work out. Although I've never personally tried it with the buttermilk, it would make perfect sense. The reason that I didn't write the recipe using buttermilk is simply that I don't usually have it on hand. If you try it, please let me know how it goes :) Thanks for commenting!

Did you know that baking powder frequently contains unfavorable ingredients (like gluten, cornstarch, and aluminum) Can you buy Gluten free baking powder?

Many are gluten free. The one I use states that it is gluten free on the label.
