Gołąbki - Cabbage Rolls - STUFFED CABBAGE - POLISH Food

This recipe for Gołąbki, or stuffed cabbage as they are commonly known, is my grandma's and mom's version of this traditional dish. Like so many ethnic dishes, there are countless variations depending on the region. I have found that most Gołąbki served in the Detroit area (and elsewhere in Michigan) comes baked in some kind of tomato gravy or sauce. Elsewhere, I've seen it served with sour cream or even topped with a mushroom gravy.
While you can surely enjoy these Gołąbki when they come out of the oven, they will only get better in flavor and texture the NEXT DAY! We would often have these on a Sunday, so they were made on Saturday, or even on Friday if time permitted.
Preparing stuffed cabbage takes time - it is not a quick prep meal! But it's well worth the effort.
1 large head or 2 medium heads of cabbage (you want at least 24 good, full leaves to wrap your filling in, plus another 10 or so to line the roasting pan - the leaves you use for the lining don't have to be perfect in shape, size or condition)
1 cup dry rice (cook in 2 cups water)
2 lbs ground pork
1 lb ground chuck
2 medium onions, diced fine
6 TBSP butter
3 cubes chicken bouillon, crushed (or 3 tsp granulated chicken bouillon)
salt and pepper
2 cans (10.75 oz) condensed tomato soup - or 1 can (26 oz) condensed tomato soup
water
4 TBSP brown sugar
Extra gravy for serving (if desired)

water
1 tsp brown sugar
1/4 tsp pepper
Rinse raw rice in sieve under cold water. Transfer to medium sauce pan and add two cups cold water. Bring to a boil. Stir. Reduce to simmer and cover. Cook 20-25 minutes until water is absorbed and rice is tender. Remove from heat and remove cover. Fluff rice with fork. Allow rice to cool completely and fluff with fork again. You don't want any clumps.
In a large skillet, melt 6 TBSP butter and add diced onion. Season with salt and pepper. Over medium heat, slowly cook onions until soft and golden brown. Watch your heat - be careful not to burn the onions, stir them often until they caramelize and soften. Remove from heat and set aside.
Get the largest pot you have and fill it about 3/4 way with water and put on heat. You can make your meat filling while the pot comes up to a boil.
In a large bowl, combine pork, chuck, cooked rice, cooked onions, chicken bouillon, and season well with salt and pepper. Gently mix all the ingredients together (I use clean hands for this job). Set meat mixture aside.
Carefully using a knife (I use a paring knife for this job) cut into the bottom of the cabbage around the core (stem). Try to go in about two inches and at an angle. You want to remove the core area from the cabbage so the leaves will remove easily. Using a large carving fork or some other tool to securely hold the cabbage, gently lower it into the boiling water. Give it a few minutes in the water and then with a pair of tongs gently start to pull the leaves away from the cabbage one by one. Put leaves in a colander or bowl lined with a towel to wick some of the water away.
Once you have all the larger leaves removed from the cabbage, use a paring knife to trim down the center vein that goes through the leaf. These are tough, and making rolling the leaf difficult, so trim it down (see video) or remove it altogether.
Make your sauce/gravy for inside the roasting pan. Use you condensed tomato soup, and then add one half of the can with water (this will help you rinse the can to get the remnants of the soup out of it). Bring it up to a simmer, stir well, and then take it off the heat. Your sauce is now ready.
The amount of filling you use depends on the size of the leaf you are using, so you will get a feel for it. Typically, the filling might be the size of two golf balls, or if you want to weigh the filling start with 3 oz portions and go up or down from there. Shape the filling in a football or oval shape, roll the leaf entirely around the filling, then tuck in the sides so what is left to roll is even on both sides. Roll up the rest of the way and put in roasting pan. Continue to roll until all your filling is gone.
Before you put a second layer of Gołąbki in the roasting pan, ladle some of your tomato soup sauce over the first layer and sprinkle with a couple tablespoons of brown sugar. When you finish putting the second layer in the roasting pan, repeat using the remaining sauce and sprinkle top layer with brown sugar.
You should have some leaves left over - or hopefully you saved the leaves that were torn or not good for rolling. Use those leaves to lay over the top of the stuffed cabbage. This will protect them from heat.
Put lid on roaster. Bake about 2 hours at 300-325 degrees. Remove from oven. They can be served immediately, but they are even better the next day or second day. Let cool down, leave in roaster and put in fridge. Warm in 300 degree oven for about an hour.

When I was growing up, our cabbage rolls contained more rice than the ones I make now. However, I'm not feeding a family of 7, who worked on our farm all day, or in one of our Tobacco fields during its season. Now that the cost of food has skyrocketed, I may have to start utilizing more rice than the usual. Hope y'all doing well this Holiday season, stay safe and healthy.

You lost me with the tomato soup and no way brown sugar. My mother was from Poland and she would be rolling over in her grave if I used tomato soup or added brown sugar to her golapki. I'm from Connecticut and eating these at the Polish club or the Polish church tomato soup was never used. When I was in Poland last year they didn't use it either.

Love your red table. I was raised in Detroit. We lived on Elmhurst Street. A lot of polish and Jewish people lived in my grandfathers apartment building. We had some the best food. I remember cabbage rolls, and cabbage and apples cooked together. I don’t get that now in South Georgia now. I am 80 years old now. I sure miss that good cooking. God bless you.

My mother in law was Russian and taught me how to make stuffed cabbage exactly as you do! The only thing different is putting the brown sugar in the sauce but I will try it on top of the roll. Also, I cut the cabbage leaves at the bottom of the rolls. I make it a few times a year and absolutely love it and I agree that the longer it stays in the fridge, the better it is. Ralph's joke about the cabbage leave and the bathing cap is the funniest thing I have heard in a long time. Thanks again!

These are best golabki I have ever made thanks to your recipe. The only change was to the condensed tomato soup. I didn’t thin it. The cabbage released enough water. I am 66. My mom’ polish family, one generation from going through Ellis Island as LEGAL immigrants do, I remember her cabbage rolls. Her entire family, going back to my great grandma were from Michigan...lots of Poles there. I remember topping off her cabage rolls with that tomato sauce and sour cream. I can’t wait to make these.

Stuffed cabbage is part of my Heritage, my mom was Polish and she used to make these. Today more people are looking at ways to cut down on carbohydrates that have a high amount in rice. I now make this without the rice, but instead use riced cauliflower. I am a stickler for flavor and found that when I serve this to people without telling them how it’s made they all loved it. I’m also glad to see you use canned tomato soup.

I made a version with minced mushrooms instead of rice to cut the carbs. It was delicious. Of course it was not the neutral flavor of rice, but it was very good and not overwhelming. My Polish sister in law uses some mushroom soup in her sauce as well as tomato, so I guess it is not an out of place flavor.

This is almost exactly how my mom taught me how to make cabbage rolls but I like your addition of the brown sugar and I will add that next time I make them. The tomato soup is a must and makes all the difference. Over the years I have lost track of my black speckled roasting pan and hope I can find another one day. The "pan sauce" is SO important though as it has all the rendered fat from the ground pork and beef❤😊💯 That's where all the magic is😉 And absolutely make these a day early (because of intensifying the flavor) but also so you can make a big batch of creamy mashed potatoes to serve with it on the day you want to eat them.

Hi Donnybrook! I think your Westinghouse perc features "Pressure-Flow" technology, which makes a good cup of coffee. Mmmm! This takes me back to my childhood. We lived next door to a Polish couple. My Mom was good friends with them and they taught her how to make Golumpki. I’m so thankful you put your recipe in the description. This is exactly how she made them. It was my favorite meal. I never got her recipe because she knew it by heart and never wrote it down. You save the outer leaves to line your pot - roasting pot with them.We used to cover the rolls with some leaves.True,the rolls are protected from burning,My mother never wasted anything. We also used far more rice and a chopped slab bacon cooked in a frying pan.Dumped everything into the rice mixture.Some like to use beef hamburger.It's your choice.

I freeze My cabbage for a few weeks. Then unthaw in a cool place for a few days. They are so easy to work with. Love cabbage rolls.Baking them as We speak.Merry Xmas

Another great idea is putting sour kraut in between the layers. My sauce is tomato soup and water. Baked slowly and serve with sour cream❤

Ah, thanks for this! My favourite childhood food! At our birthday we were allowed to choose dinner, and I always picked this. My mom made it not as separate rolls, but in layers in the pan. With some cumin in the stuffing too. I can still taste the almost scorched bits of the leaves, my favourite part. As soon as I have eaten room in my freezer, I'll make these. (It's just me, and I love to cook and bake.)

Steve .. Trick next time for Cabbage. Core & seal tightly in plastic wrap or bag . Place in freezer. Remove at least a day before to thaw in your refrigerator. Leaves come apart easily... try it , you might like it . French girl in Canada 🇨🇦 Suzanne

Тетя Паша была изПольшы после войны приехала к нам в узбекистан и осталось на всю жизнь.Она совсем наша тётой Паша стала я даже забыла написать что она из Польше к нам приехала.

Oh my gosh! Thank you so much for some tips down memory lane. Not only did I grow up with these wonderful cabbage roll treasures...my Mom's family attended St. Josephat....as well as Sweetest Heart of Mary and St. Albertus. I now live in the the desert southwest...but you brought back beautiful nostalgic memories with this recipe and the reference to St. Josephat!!

I also cook my stuffed cabbage in tomato soup. Old family secret from the Polish side of the family. My German side also made stuffed cabbage but cooked them in sauerkraut.

Brought back nice memories. Thanks. Our Carholic Church congregation was at least half Polish, with a few other Eastern Europeans thrown in. Our Priest, Father Keenan was very Irish. He was very droll and he told wonderful stories, hilarious anecdotes, clean jokes, and riddles all of the time. The stories seemed to all have a teaching moment or thought. The jokes were made at his own expense. There was some type of competition between some of my friends moms over various recipes too. I was not old enough or interested enough in learning to cook at that point of my life so I didn't follow it. My sistet did all of the inside chores and I did all of the outside farm chores. Caring for and training our Quarter Horses. Caring for and feeding all of our beef cattle, dairy goats, meat pigs, laying and meat chickens, and meat rabbits. We hunted and fished. Gathered wild and home grown berry's. We had a small apple orchard. We always had huge gardens. My mom stored, dried, canned, or froze a large potion of our food. We all helped with that. As to cabbage rolls, I was one of the teenage "pairs of hands" volunteered by our moms to assemble the cabbage rolls for our fall church dinners so I was good at the rolling part of our assembly line. I did not make the meat mixture or the sauce so didn't know how simple it could be. Wonderful. Thanks for sharing. The Church Ladies, as we called them, did make the sauce from a heavily guarded scratch recipe with stewed tomatoes The meats were spiced and ground together at our local meat locker. I'm pretty sure that there was more than salt & pepper spices in it from the smell. Once again thanks for the veritable flood of memories.

I followed your recipe to a 'T', with the exception of a little chopped green pepper that I needed to use up. They are in the oven for round one as I type this. Thank you so much for sharing your mom's recipe. This is how I remember my Polish grandmother from Buffalo, New York making them. Update: They came out of the oven a few minutes ago and I cheated...couldn't wait for day two to test. Oh My Gosh! These are the best. I put a dollop of sour cream on top and they are how a cabbage roll should taste. Thank you!!!

Kevin, I incorporated some of your ideas and the golabki I made were really good. I belong to a Facebook group for Polish food and saw where one of the members said he used beef, pork and veal, so I used half a pound of beef, half a pound of veal and a pound of pork. Where you added a couple bouillon cubes to your meat, I used chicken stock made with Knorr's Granulated Chicken Bouillon to partially cook the rice. And where you sprinkled brown sugar on the golabki, I added 2 teaspoons of brown sugar to the tomato sauce. And I cooked them at 325 degrees for 3 hours in a covered roasting pan. They turned out very well. I just took them out of the oven. They'll taste even better tomorrow.

Loved this recipe Kevin, this is the closest I have seen to my Mother’s recipe. The only difference was the cooked onions, she would just grate two onions in it but I think the caramelized like onions would bring this to the next level. My mother also would do cabbage on the bottom and strips of raw bacon then the cabbage rolls. Loved your recipe and hope to try it soon! Also loved the extra gravy idea as there is never enough for my taste!! Love your show.

I really enjoyed your video. I grew up eating cabbage rolls too but my mom made the meat stuffing very different and sometimes added a layer of sauerkraut to the roaster pan. They are a wonderful comfort food.

Your recipe is by far the best anywhere in my opinion! I have had Polish cuisine at restaurants, Polish deli's, festivals, and even my own, yet your ratio of meat to rice makes for a full bodied, delicious meal. The caramelized onions, the simplicity of the large cabbage, and every step in between was thrilling for me! Honestly gents, My experiences having Golabki in NY is a far cry from the flavor packed meat combination and lower rice ratio your family crafted. I will make this recipe with such pleasure and be thinking of you both for years to come! Ralph's humor makes each video so much fun and memorable too! I was laughing at midnight at Ralph's stack of tortillas comment.

I make stuffed cabbage kosher style without pork. I also use the extra cabbage on the bottom. Make sauce with tomato juice add the rest of cabbage chopped and one package of dried prunes and a cup of white raisens. Also I add my rice raw and cook it on the stove top or the oven either way it’s so yummy.

Love stuffed cabbage . I grew up eating these. We ate ours with sauerkraut and tomato sauce. Baked with a layer of cabbage rolls then a layer of sauerkraut, tomato sauce and repeat until roasting pan is full. Can do with a little less background talking .

I do use 2 cans tomato soup,small can,add 1 tablespoon of brown sugar and 1tablespoon lemon juice to each small can ...pour over cabbage rolls. Then take one can of tom soup to make gravy...i make mashed potatoes pour tomato gravy over mashed potatoes. Yummy,

my grandmother used to add mushroom soup to the filling to keep it moist and shapable when rolling.. she used spaghetti sauce for the sauce/gravy.. i miss her cabbage rolls.

Hi Kevin! What a great segment! I have so waited for your moms recipe and I have to say it brought tears to my eyes literally! What wonderful memories of making them with my Grammy and we used the exact same roaster pan. Food is memories and memories are food for me. When my Grammy made hers she used salt pork in them as well, have you ever done that? I believe she chopped it very tiny and fried it out and mixed it into the meat with all its drippings as well. I've always made it this way, but someone else told me many years ago that they used a little salt pork in their recipe. I can see where the salt pork and the drippings would lend a very nice flavor to the filling! I put half of this batch in the freezer and we ate the other half over two days - so good!! Thanks!!

I just found your videos, and I love the recipes as they remind me of my youth. We are a family of 10, and I remember the Seminarians coming home on Thursdays for a meal. I learned several years ago that if you put the whole cabbage in the freezer for a couple of days, when you thaw it the leaves are perfectly soft and ready to roll. Works great. Loved the video. My mouth is watering. I’m pulling out mom’s recipe!

My mom taught me to make these as a teen and then she never made them again because of how much work it took. She delegated the job to me. As revenge, i changed the gravy to a mushroom and sour cream with a touch of brown sugar. She was so mad but my dad and siblings liked them better.😂

Great story, Annette! A woman who was born in Poland made these for me once and she had a mushroom gravy over the top - with sour cream! When I asked her why she didn't use a tomato based gravy, she said in the town where she grew up this is how they were made! Thanks!

Hi Kevin and Ralph! Yet another terrific Cavalcade recipe. Being of Slovak descent, stuffed cabbage is a favorite in my family too! Yours looks wonderful! The poem that Ralph is referring to is Lewis Carroll’s The Walrus and the Carpenter. “ The time has come to talk of many things, of shoes and ships and sealing wax, of cabbages and kings and why the sea is boiling hot and whether pigs have wings.” Have a lovely day guys, looking forward to another video!
