In this video, So Han discusses fresh White Tea. White tea is raw tea, or tea that never undergoes the Sha Qing process, which would lock in an oxidation level by denaturing the enzyme Polyphenol Oxidase. Being uncooked, White Tea will continue to oxidize, slowly, as it ages. There are many grades of White Tea, typically organized by bud content. All bud teas, called dān yá 單芽 ("Single Bud"), like White Hair Silver Needle, are the highest grade. The middle grade is yī yá yī yè 一芽一葉 ("One Bud, One Leaf"), such as Bai Mu Dan. The lower grade is called yī yá liǎng yè 一芽兩葉 ("One Bud, Two Leaves"), such as Shou Mei. Though it originates in Fujian, White Tea is made in many other regions of China, including Sichuan, Yunnan, and Guizhou.
