So-Han dives into the world of Yellow Tea, a type of tea defined by its light oxidation level. In this episode, we learn about the mèn huáng 燜黃 ("stewed yellow") process for making yellow tea, which is a process of keeping humidity trapped in a mostly-closed environment during oxidation. Yellow tea is generally made in small (artisan level) batches, as it is an extremely intuitive process and cannot easily be replicated exactly from batch to batch. So-Han discusses some famous Yellow Teas, such as Junshan Yinzhen, as well as some more novel teas such as the Du Yun and Lao Gong Xiang Yellow Teas from Guizhou.
