My second cousin owned two restaurants and managed to retire by selling both. I once asked him how he kept things clean after seeing shows like this. He claimed that getting staff to clean up could be hard, but his solution was boxes of disposable gloves. Nobody wants to touch grease traps and other hot spots. Nobody wants to wear rubber gloves after one another. He swore that adding a couple boxes of gloves to the monthly budget got his employees to put in the effort. That said, I doubt either of my cousin's restaurants were ever remotely this bad!
