10 minutes Fish and Chips. (batter, crispy fish, skinny chips, tartar sauce, lemon slice) Batter: (slight runny consistency, just dropping through whisk) Self raising flour (120g) Baking powder (tsp) Curry powder (colour) Ice cold beer Aerated egg whites, whisked 3/4s(touch of salt not too early) Crispy fish: Cod fish slice Lightly season Into self-raising flour touched with curry powder Knock off excess flour Coat/dip completely in batter Shallow fried (3-3.5 mins) Finish in the oven for crispy finish (2 mins) Skinny chips: Dry potatoes, rid of starch and moisture (rub with paper towel) Shallow blanch (touch of cold oil to reduce oil temperature) Shallow fry (crunch and colour) Touch of salt Pat them dry Tartar sauce: Crème fraîche Mayonnaise Gurkins (diced) Tabasco (touch of heat) Salt (touch) Shallots (chopped) Squeeze of lemon Serve with slice of lemon. Oil temperature control: Shallow fry, splash of cold oil if frying oil gets too hot

The fact that a world class chef uses the el cheapo T-Fal pans at home just proves that you don't need fancy cookware to be good.

I made this tonight as I so miss the fabulous fish & chips I used to get on London streets, hot, wrapped in newspaper, with malt vinegar. I just sat on the step outside the shop and ate it. Incredible. I knew GR would have an amazing recipe and he did not disappoint! Took me longer than 10:30 second tho haha. Especially because I had to turn my all purpose flour into rising flower. But this recipe is easy and SO worth the effort. Will definitely be doing this again. Be sure to watch this video and another video he made regarding this recipe before you do it as it helps because this all cooks fast. Also don't make the mistake I made and stack the fish in a pie pan with foil and a little vinegar drizzled over it, then covered in foil when keeping it warm. It will mush your bottom pieces. I used to work at one of the famous fish & chips in Scotland & his Fish batter secret is 100 gram rice flour & 100 gram plain flour mixture with 70 ml Cold Vodka & 110 ml Cold Dark Ale/Beer in to Fish batter mixture with 1 spoon honey & little salt and add Yeast half a tea spoon... keep it in to fridge for 30 mins. Take out from fridge. take cod/haddock dry it & dip in to dry plain flour then dip in to fish batter mix & fry it on 360 degree F. . Enjoy & give it a try at home & enjoy with your family & friends & please don't forget to give me bless...Please...Remember me in your prayer...Thank You & love you all..

The love and chemistry he has with his children just pours out of them in all of their videos. I'm sure all the traveling, late nights, early mornings, and long days working in kitchens all around the world tend to wear him out after awhile but when you have that sort of love and support waiting for you at home, it just helps reset your mind and make your heart feel full.
