Tacha's cake looked the way a pineapple upside down cake should. Mom always let the brown sugar caramelize and added some pineapple juice to the batter.
Yup!! Her cake is close to how my Mexican family makes it, I think I’m gonna have to incorporate that crème and sugar on top, I normally use brown sugar at the bottom of the pan, but I like her way. And I do use both the pineapple and cherry juices in the batter 🫣

@Penny I don't have to taste this cake to SEE that it looks better than the other two cakes that were presented. As a professional Chef, I don't need to taste pineapple to determine that rum and caramelized sugar are compliments to the flavor of the fruit - these are classic complementary flavors. None of my assessments require that I taste the cake; they are based on visuals and experience.
I was waiting for someone to make a nice butter cake, with lots of butter, brown sugar and pineapple and maraschino cherries! it’s not very difficult to make an amazing cake that comforts the soul!

Tacha’s upside pineapple cake was the only one that looked like a traditional upside pineapple cake. I honestly don’t know what kind of cake Mimi brought because that wasn’t it! Overall, this video was hilarious! 😂
My Mother was one hell of a cook. Her meals were good ole southern meals and everybody loved them. When we had family cookouts her brothers would get her to cook most ofthe foods and not their wives. My uncle's would always come over on Sunday to get some of her food. She was also good at baking, sweet potatoe pie, pecan pie, red velvet cake, the old school carmel cake but her specialty was pineapple upside down cake. She had church sisters asking her to bake them upside down cake. She's in heaven now and i haven't had good upside down cake in 9 years. Some have come close but nobody has topped her pineapple upside down cake... Miss you Johnnie Mae and your cooking...😢
