I worked for a Dutch meat cutter his name was Hank Whisker. He would have scolded me for hitting the eye on that rack of lamb while cutting those bones. He was a good man. I learned a lot from him and others in our time together.

Looks absolutely delicious, better to take your time and make good cuts than rush when you don't need to and possibly give your customers an inferior product. Yep, I along with 2 more people would fill 2 sixty foot multi tray counters in 2.5 hours before the store opened. then go for breakfast, back down and prep a load more before leaving.

he properly knew how to cut.. but its not great... its a basic cutting skills. i used to watch back home butchers who cut goat meat / chevon its so fast without using a saw.
The saw is for cutting through bone. Interested in knowing how your hometown butchers dealt with bone in cuts. Most butchers wouldn't use a knife on cutting through bone due to the high risk of damage and dulling. Maybe you can post a video showing how they do it so we can learn.
Old hogget was hideous, poor conformation, poorly skinned at the abattoir, too much blade bone left in the best end (for profit! ). Pork too fat, chine left on chops (again for profit! ). All in all your typical average butcher.
