As a Latin Catholic who doesn't like fish, I found this in time for Ash Wednesday and it is delicious! I used garlic infused olive oil instead of garlic cloves but it still worked out. Thank you Dimitra. I'm glad I found your website and I'll certainly be making more of your vegetable dishes throughout Lent.

@@danielagiovanazzi2055 la differenza è che nella tradizione ortodossa di fanno più di 40 giorni di quaresima vegana prima di Pasqua… anticamente anche i cattolici facevano lo stesso ma poi si sono un po’ allentati nelle aspettative verso i laici fino a arrivare a uno o due giorni l' anno "vegani"

I made this and I enjoyed it. I did not have a leek so I used a bunch of green onions. Also the next time I will not add the dill. I served it with feta and a whole wheat pita. Outstanding.

It looks delicious, I’ll have to try it! I made your spanakopita recipe for dinner and it was a hit. One question though: because it produces so much, is there a way to cut the recipe in half? There’s only three of us so it is a lot more than we really need for a normal dinner. Thank you.
