Poha is also known as flattened rice. Originating in India, rice is parboiled, rolled, and flattened to produce flakes. While flattened rice is used widely across India and other regions, the most common dish served is Poha.
This recipe is a classic 'Taste of Isha' raw, light, aromatic, and nutty. If you have the ingredients on hand, you can make this easy raw dish in less than 30 minutes! Great for lunches or as a side dish.

🍜Serves 4-6
🍚Ingredients
◾ 100g Thick Poha
◾ 235g Cucumber
◾ 10g Cilantro
◾ 10g Mint
◾ ⅓-½C Raw Peanuts, roasted
◾ 1TB Sesame Seeds, roasted
◾ ¼ts Salt
◾ (Optional) Up to 1TB Lemon Juice
*Roasted Peanuts - The nutty flavor of peanuts really makes this dish. If we made it again we would favor the half cup of nuts or lightly chop them so they're equally distributed throughout.
*Pink salt is used in all posted recipes. If using standard table salt, reduce the quantity then adjust to taste.
