When I make a soup or stew I’ll first fill my bowl with greens and then fill bowl with the hot soup or stew and let the heat wilt it while I eat it.

You should always wash greens before cooking or eating raw, even the organic greens. :-)

I'm so grateful that I learned to make savory oatmeal with Anne Esselstyn. I've had oatmeal with kale almost every morning since I learned that recipe. I had a small heart attack almost 10 years ago. I found Whole Foods Plant-based eating about 2.5 years ago. Since then, I've lost over 75 lbs., and the doctor has taken me off all heart medications. Greens, greens, greens... and they MUST be anointed with a good quality balsamic vinegar. :-) Thank you so much Esselstyn family!

JAMANI try making Jill Nussinow’s Smoky Cheezy Steel Cut Oats. My husband is an omnivore and he always asks me to make it. It has sweet potato, kale, green onion, parsley, carrot, celery in it. It is soooo good! It is in her book Vegan Under Pressure for the Instant Pot.

@@cr3296 I live in hot climate more than 3 years and I go to sun everyday for hours. I eat lots of saturated animal fat, livers etc. I know lots of polish people with super dry skin but never really exposed to sun

I agree with Mom. Collard stems are great. Raw collard stems make the perfect road trip snack for me. Toss ‘em in a zipper bag; I guarantee you they’ll be gone 30 miles down the road. It’s late Fall; collards are all around. Oooooeeee!

I love your kitchen! It’s filled from top to bottom with healthy beautiful things- along with great natural light from those windows! So many cooking videos look like no one has ever stepped into the kitchen they use. What a shame. The kitchen is the center of a happy healthy home! (And thanks for the tips for getting more greens into our days - they are as beautiful as they are healthy!

@@spin564 hi..do u know that farmers engage in some unscrupulous behaviours for profit?..they feed the animals chicken poop to build muscle bulk, then they feed the animals limestone to counteract the effects of ammonia from the chicken poop. ..just awful how inhumanely animals are treated.. I kid u not..do ur own internet searches..grow ur own vegetables

@A M ...a blender is good too..breaking up the cellulose in the green leaves is important for digestion...or u will have to chew chew chew for hours to get the full benefit of a large green salad...u could add chickpeas/lentils/green beans or seeds to ur blended fruits too..make it a meal, especially prior to going to work ..be healthy..be happy.

I actually really enjoyed watching you cook because there were so many gems that I needed, I toss the stems of broccoli not knowing I should be eating it, Handfuls is a good form of measure, eating beet greens (they usually get tossed), rotation on all greens and not fixating on one. I need more like this to teach me true plant based cooking and eating. Cant wait to go back and watch old videos to learn more

I make Ginger's magic cheeze sauce. Boil a head of cauliflower, 1/2 an onion, 1-2 cloves garlic, a carrot, a pinch of Italian herbs, and a dash of red pepper flakes. Puree with 1 T lemon juice and 1/4 c nutritional yeast. It's great on nearly any dinner bowl and such an easy way to get in the greens.

I'm cooking for 2. Ginger's Magic Cheese Sauce sounds like it would make a large quantity. Does it store well? Also, when you say you put it on a dinner bowl do you mean salad or a stir fry (most likely oil free)?

My favorite breakfast is toasted whole wheat bread spread with roasted sweet potato (from my weekly batch-bake) and a big handful of whatever greens I have handy. I spice it up with various seasoning blends and sometimes a little sriracha or vegan kimchi. Great start to the day.

Make sure your toast is whole grain or sprouted. It's a lot better for you than whole wheat.

I'm a huge fan of using raw collard greens (with the middle vein shaved close to the leaf) as wraps. I just julienne carrots, beets, green onions, beans, peppers and avocado/hummus and wrap it all up like a burrito. delicious

Me neither!! I'm going to give it a try. Honestly, it sounds weird having only considered oatmeal a sweet thing. We eat them with berries and so that is at least healthy, but per Dr. E we are putting more greens in our diet so I'm all over trying it! Thanks so much ladies for this info!

Almost any greens are great steamed with turmeric and ginger. Take turmeric and ginger roots and shave thin slices off them with a peeler (or just chop up finely with a sharp knife) then sprinkle through the greens in the steamer. When they are cooked add a little soy sauce and a sprinkle of sesame seeds. Mmmm! If you don’t have fresh ginger and turmeric roots you could make a dressing with ground ginger, ground turmeric, cider vinegar, tahini and some crushed garlic. Greens taste great tossed in that after they come out of the steamer because it is all the same flavours.

There are lots of desserts you can make with steamed cauliflower, from chocolate parfait to frozen cake , it’s my favourite way of sneaking them in 😉

great tipps! My favorit ways of sneaking in vegetables are: 1. making a porridge without oats, just greated parsnips cooked in coconut milk with some spices and then topped with raspberries. 2. Mixing greated zucchini under overnight oats 3. chocolate beet cake 4. chocolate mousse made from avocado . . . . and my favorit dish that kinda hides greens is colcannon, mashed potatos with cabbage and leeks mixed into it

Hi! Love your videos! I take the stripped kale stems and dehydrate them...pulverize once dry and throw it into whatever needs a vitamin greens boost! The sky is the limit!

@@nmccutcheon2243 Or use the kale stems in a veggie stock. I freeze them along with other veggie waste, throw them in a crock pot, add water, cook all day, cool, then freeze in quart baggies. My recipes have more flavor and nutrients than store bought broth!

HERE is the list of greens that she said that was on her dad's t-shirt, bok choy, swiss chard, kale , collard greens, turnip greens , mustard greens, beet greens, napa cabbage, brussel sprouts, broccoli, califlower (which to me is not a green) , cilantro, parsley , spinach, arugula , AND asparagus hahaha..

Considered a green due to its plant family. Cauliflower is cruciferous vegetable, a plant family that includes arugula, bok choy, broccoli, Brussels sprouts, cabbage, collard greens, kale, radishes, turnips and watercress. It has a rich supply of nutrients comparable to its green-colored relatives in the cruciferous family.

Romaine is good to roll various foods in for hand held munch! Have also seen people taken bottom part that was broken off, put in water and grow more romaine in their apts! Thank you so very much for the help I really can use it.

I find the mustard powder takes away from the lovely taste of the broccoli, or broccoli soup - so i just take 1/8 tsp of powdered mustard and wash it down with water, then eat the veg.

I use a large bowl and chopper tool..’ like subway uses for their chop salads... throw in all the greens you like...perfectly massaged kale, etc... love it👌

I put oat milk in the blender with two handfuls of spinach or whatever green I have on hand. Add Tumeric, pepper and cinnamon then pour over my oatmeal. I also LOVE beets. I slice them very thin and air fry them. They are crispy like chips and have a natural salty sweet taste.

Arugula is the best, my absolute favorite. It really has a nice kick to it. It also has insanely high levels of nitrates, much higher than beets.

I sprout a lot. One of my favorites is pea sprouts and beet sprouts. I was surprised that you did not add hand fulls to the salad.

This is one of the most helpful videos I have seen on the how-to's of plant based eating. I have struggled and struggled to get enough greens every day. I am working to become a healthy plant based eater--after years of undereating vegetables and after years of almost no greens. Now I feel I have practical ways to incorporate the greens. But one thing...could you make a Greens, Greens, Greens! followup video with more ways to incorporate the greens on a daily basis (and sometimes to sneak them in)--and perhaps after that-- two or three more videos on exactly the same topic (actually as many videos as you want on the same topic). I say this because getting enough greens is clearly so critical, as Dr. Esselstyn emphasizes. It is so easy to be a vegan and sadly-- very unhealthy. Thank you again for this video--and for all your other wonderful videos!

When ann started getting mad about the broccoli stem, I started laughing. I do the same exact thing I just chop a little smaller so it still gets tender. Love it!

I only recently started adding stalks from broccoli and stems from greens to my cooked or raw greens. But I wasn’t wasting them. I saved them along with other veggie scraps and onion/garlic skins for homemade veggie broth. Now I’ll use only half in the broth and add the rest to my main dish! Thanks!

There was a show on ZLiving called Good Food America. I picked up a lot of great ideas from that show and one was using collard greens as wraps instead of tortillas - so good!

This was such a fun video. I learned a lot! It is tough to cover all the info needed - but I'd suggest some mention of washing up all those leaves. There can be dirt/grit that needs to be removed and managing the washing part is probably a video all in itself. It just comes down to a good routine.

Glad I'm not the only one who notice that they didn't wash the greens or even mention it. It seems that I spend a lot of time washing and drying greens so I often buy the packaged "triple washed" greens.

Cauliflower bechamel in lasagne! Break up a whole head of cauliflower and boil in a few cups of water then, when it's soft, blend it with a quarter cup of the water, quarter cup of plant milk and half teaspoon of nutmeg. Use as the white layers in lasagne. Delicious.
