Time for another grilled cocktail? When approaching the dog days of summer, I like to chill on my patio and beat the heat by drinking a refreshing Gin and Tonic. Gin and Tonics are great and of course are real quick and simple to make. But if you get tired of the basic G&T, i thought we can kick it up a few notches by grilling some pineapple on the BBQ and see what happens! Stay cool out there. Cheers!

GRILLED PINEAPPLE G&T
--------------------
CUT TWO PINEAPPLE WHEELS AND BRUSH WITH COCONUT OIL.
GRILL FOR ABOUT 5 MINUTES BEFORE TURNING THEM OVER.
CONTINUE GRILLING UNTIL THEY ARE LIGHTLY BROWNED, SMOKY AND CARAMELIZED.
LET COOL.
CUT ONE WHEEL OF PINEAPPLE INTO WEDGES AND MUDDLE IT IN A COCKTAIL SHAKER.
ADD
2oz (60ml) - DRY GIN
1/4oz (7.5ml) - LEMON JUICE
1/4oz (7.5ml) - LIME JUICE
TOSS IN SOME ICE AND GIVE IT A GOOD SHAKE.
FINE STRAIN INTO A GLASS OVER FRESH ICE.
TOP-UP WITH 2-3oz/60-90ml CHILLED TONIC WATER.
GARNISH WITH THE REMAINING GRILLED PINEAPPLE WHEEL AND A MINT SPRIG.
