Recipe - Grilled Kurobuta Pork Chops with a Apricot Jam Glaze
Ingredients:
- 3 bone-in Kurobuta Pork Chops

- Olive oil
Glaze ingredients:
- 1/2 cup Apricot preserve
- 1/4 cup honey
- ¼ cup apple cider vinegar
- 1 tbs stone ground mustard
- 2 tsp Worcestershire sauce
- 1 tsp sriracha sauce
- 1 tsp Heath Riles BBQ Garlic Rub
- ½ tsp onion powder
- Salt and pepper
Directions:
1 - Preheat your PK Grill to 350° and setup for direct grilling
2 - Make your Apricot Jam Glaze.
- Combine all the Glaze ingredients in a sauce pan and heat on medium heat until it start to boil. Stir continuously.
- Remove from the heat and set it aside, it will thicken as it cools.
3 - Apply a lite coat of olive oil to all side of the pork chops to act as a biner and then season to taste with Heath Riles BBQ Competition Rub
4 - Place the pork chops on the grill and cook 2 minutes before flipping. Continue to flip the pork chops every 2-minutes until you reach an internal temperature of 145°
5 - Apply the glaze to the top pork chops and return to the grill to set the glaze. The Sauce should set in about 2-minutes, flip and apply the glaze to the opposite side. Set the glaze for about 2-minute
6 - Remove from the grill and let them rest for 5-10 minutes in a warm location before serving them
