Cut 2.8 kg pork neck into thin strips from the long side, not cutting all the way through about 1cm at the bottom.
Marinade (tablespoon level)
150 ml oil
4 tbsp oregano
4 tbsp thyme
2 tbsp marjoram
3.5 tbsp salt
2 tbsp pepper
4 tbsp sweet paprika
1 tablespoon of sugar
Mix and brush all over the meat, between each slice.
Cut 3 red onions into thin rings
5-6 cloves of garlic, thinly sliced.
Distribute in the cuts. Tie the roast with kitchen twine. Wrap in foil and marinate in the refrigerator overnight.
Place 2 onions cut into rings in the oven dish. Put the roast on top (squeeze it a little, it just fit in for me). With lid at 230° = for 2.5-3 hours. braise.
Remove the thread and now cut slices from the narrow side.
