In this segment we take on the task of preserving our hot peppers. It’s late October and we’re overwhelmed with peppers. So we’ve decided to freeze dry our excess jalapeños, Hungarian Hot Wax, and Banana peppers. We all managed to contract Covid-19 and it’s been a tough couple weeks on the homestead. But despite illness and Rich’s double pneumonia…work still must be done.

Hey, thank you for the good thoughts! We all recovered, although what I don't mention in the video is that I nearly didn't survive my encounter with the virus. In April of 2020 I contracted the first wave of it, got double pneumonia, but was able to fight it off. Late September of 2021 I contracted the second wave and I didn't have enough immune system to fight it off quick enough. I received the monoclonal antibodies first week of October and it stopped the progression of the virus. I'm lucky to be here! Thank you for watching our videos.

We’ve done a couple of different things. One was we powdered some of the peppers and added to a salve for pain relief. Others were thrown into Mylar bags for future use. And still others were ground to be used as a spice for savory dishes.

​@rlittlehomestead6397 double pneumonia is no joke. I'm not trying to tell you what to do, but it only gets worse if you don't rest when you have it. In my opinion if someone has pneumonia things can wait.

What does.. flash freeze mean? How is that different from just putting things in the freezer?

It drops the temperature of the freezer down to negative 8 in a matter of minutes.

So, how do you clean the pepper smell out of freeze dryer? I’m afraid to run another batch, I think everything will taste like pepper

when you excess garden veggies try giving them away to people that would appreciate them fresh.....if we all live so long, I can guarantee nobody is going to be eating those peppers in 20 yrs.....think people......your not going to garden in 20 yrs?...you're not going to want a nice fresh veggie?.....like I said, nobody is going to want freeze dried peppers in 20 yrs when they have a nice garden...

The point is not the 20 year shelf life. The peppers ,or any vegetable,are only shelf stable for so long…and then they rot. The point here is to be able to preserve our organic, nutritious, home grown produce at its peak and then have those very delicious vegetables throughout the rest of the year. We love to can our produce, but the canning process depletes many of the valuable nutrients within that item in the preservation process. It also takes a great deal of heat and energy to preserve our food in this method…and alas space for storing all these canned goods. Your missing the point if all you took from this was it’s shelf life. It all boils down to time, space, and freshness. The freeze dryer saves us time by allowing us to let the machine do the work, the FD allows us to store in plastic bins dozens upon dozens of meals, and most importantly it gives our family the most nutrient dense product for our consumption during the long 7-8months of crap weather. Alas bringing me to my last point of contention…do you have any idea how much produce we grow and give to others??? Literally hundreds of pounds we give to our family and friends. Anyways glad my blood, sweat, tears, hard work and thousands of hours of research into having food security for my family fell past your watchful eyes.

How JUDGEMENTAL!!! How do you know he doesn't give any away to his family and friends BEFORE he puts anything up? YOU CANNOT GUARANTEE ANYTHING that will be happening in 20 years! But HE can guarantee his family and friends will be eating peppers and veggies in 20 years because he has taken the time to preserve them!! We are able to have peppers and tomatoes for Soups, salads, sandwiches ALL YEAR ROUND. We even crush them with preserved onions and garlic and use it for seasoning . No store-bought junk full of chemicals for us. To say YOU can GUARANTEE NOBODY'S going to be eating those peppers is not only ARROGANT but obviously also UNEDUCATED about what is going on in this world. You honestly think you can guarantee that you will have the fertile soil, fertilizer, pest control and ample water for a garden in 20 yrs? And if those products ARE even AVAILABLE for you, will you be able to afford them? small farms are struggling to get fertilizer right now. Just look at the availability and variety of FRESH produce offered in stores today. some states are saying you cannot have Gardens and if you do have Gardens you must register and they monitor your water usage. People like you that are thinking in 20 years you'll be able to live a life like you are now are the same people that will starve or eat only what the government decides that the farmers can grow. Of course unless you're very wealthy, which you might well be because of your attitude and over confidence. However people like this gentleman, many, who preserve their food now, CAN GUARANTEE, will not only have good food they like to eat for their friends and Community but they will also have bartering power. WE will shop in our storehouses ALL YEAR ROUND and enjoy peppers, tomatoes, a variety of fresh veggies and meals from our gardens, pesticide-free and full of nutrition, just as they were when we put them in bags. YOU can go shop at the stores for the food that someone else chooses for you. This video is over a year old so I can only hope that you have had your eyes opened and are doing what you can for your family and Community as this gentleman has, so that you can guarantee you have fresh food.
