During the Fall you really want to nourish abundant energy and hearty soups and stews are perfect to warm the body and deliver a large dose of satisfaction and nutrients.
You will LOVE this Fall inspired Stew from my Book Simple Cooking for Vitality (see link below) it is featured in the Spleen section of the book as the spleen loves sweet comforting veggies.
Ingredients
Avocado Oil
1 Cup Sliced yellow or sweet onion
3 garlic cloves
1/2 tsp sea salt
1/2 tsp Ceylon Cinnamin
1/4 tsp each Paprika, Cardamom, ground cloves, Cayenne pepper
4 cups Organic Veggie Broth
sweet potato (garnet and purple mixed is great) 1 cup
1 Cup butternut Squash
1 Cup Turnip, Peeled cubed
1 Cup pealed sliced carrots,
1 cup Zucchini
2 cups Chopped Red Kale
1 Cup Butter Beans or Great Northern Beans, Can Drained Rinsed (I preferr Eden Brand)
1 Cup Organic Diced Tomatoes
Juice 1 Lemon
Fresh Chopped Rosemary & Cilantro
extra cilantro and chopped red onion for topping
