🍞Dough:
120 g durum wheat flour
130 g whole wheat flour
250 g of bread wheat flour
400 g of cold water
3 g of pressed yeast dissolved in 20 g of water
160 g of biga
10 g of salt
Additionally, 10-20 g of water, if the dough takes water well
