✦INGREDIENTS: (3 Hrs Cooking Time)
• Honeycomb tripe precut or cut in 1.5" pieces (rinsed well)
• 2 Limes or 2 tbsp white vinegar for rinsing
• 1/2 onion
• 1 Tbsp oregano
• 2 Bay leaves
• 14 Chile Guajillo
• 3 Chile de Arbol for very mild) * Add more if you want it spicy hot
• 7 garlic cloves
• 1/4 onion
• 1 Tbsp oregano
• 1 Tbsp cumin
• 2 cups water from pot
• 2 (30 oz) white hominy (rinsed)
• Salt to taste
Toppings:
• diced onions
• shredded cabbage
• cilantro
• lime
