🍞 INGREDIENTS 🍞
- 600g bread flour
- 390g water
- 180g sourdough
- 10g salt
🗝 HOW TO 🗝
- Autolysis : 30mn
- First proofing : 3h at 27°C
- Rest : 30mn
- Second proofing : from 4h to 24h in the fridge (~4°C)
- Baking : 25mn at 250°C in a dutch oven with the lid on + 20mn at 200°C without lid.
