BUCKWHEAT PANCAKE MIX
2 c. all-purpose flour 1 tbsp salt
2 1/2 c. Buckwheat flour 1 tbsp sugar
3 tbsp baking powder 1 c. butter, cubed
Add all dry ingredients to your food processor (or to a micing bowl). Add cubed butter and pulse until well blended (or use a pastry blender by hand).
Store in an air-proof container. You can make multiple batches to fill a gallon jar.
To use: For every 1 1/2 cups mix, use 1 cup milk and 1 egg.

Making everything from scratch can be so time consuming but so worth it. Love the idea of doing all the prep on the weekends! That would make my weeks so much more relaxing

Hi Tash! ❤️😘 Yes, it is a lot of work!!! I do my best, but none of us are perfect. I think incremental change over time is best. It can get overwhelming. I still pick up frozen chicken strips in a pinch 😂😂

I do premade pizza, large batches of freezer pie crust, I buy leg quarters; seperate the thigh from the leg, put them in ziplocs and season them. Separate large meat purchase into 1 pound packages. I've started buying bulk snacks and separating them myself. I use powdered milk in cooker recipes

I love your videos! I cook my hamburger when I get home from the grocery store and put it, by the pound, into freezer bags and flatten them. Having the meat already cooked for spaghetti, chili, sloppy joes, etc. is a game changer. I also mix up a meatloaf or hamburger patties and freeze them as well. I thaw them out in the fridge the night before eating. I also stew chicken and shred it into 2 cup freezer bags for chicken salad, casseroles, etc. There are a lot more things that I prep but don’t want to bore you! Have a great day!

Hi Suzanne! Freezer meals is a great idea for your busy days on the farm. On a smaller scale, when I had garden produce I would make casseroles using eggplant(moussaka) or stuffed peppers, or zucchini lasagna and then whichever dish I made, I would make a couple more to freeze. I did it more so as not to let the produce go to waste. It worked well. Well your pizzas look delicious, and I can see them not sitting in your freezer too long. Your ideas are always so good, and that airfryer looks like a really good one. Thanks!

Hi Roberta! I love that idea, especially using the garden produce. I really need a bigger deep freeze. I think I would definitely do that! I only have a small apartment sized deep freeze (plus 2 fridge freezers). It fill up fast during the growing season! But even having extra in the fridge for later in the week would be great!

Awesome job MamaOfTheHouse! So, if/when you run out of pizza boxes you can use the cardboard cake bases at a hobby store or Walmart 😉 And something that has stuck with me after eating real pizza from Italy was that you can literally add anything! They had fried egg and green pepper atop their pizzas instead of our American usual, so there are a ton of easy variations if your family loves the pizza but needs new topings to keep it interesting 😉 Yhank you for the encouragement

I love the idea of trying different ingredients! Yum. I did actually try to get the cake bases from Bulk Barn, but they were so expensive! I think they were 2.88 each, which will add up fast if you are doing many pizzas. But a great option if you are only doing a few! I actually did buy 2, then used them to draw the circles on my pizza boxes! 😀

Yes, I might have to do that!! I actually grew a row of cut flowers, and a row of tea herbs in my vegetable garden. I loved them so much! I wanted them to have their own space. I suppose I’ll think about it for a future video 🌸🌷

You can get a bunch of chicken (breasts and thighs) and then marinate them and put them in the freezer. Makes for super easy grilling. Just add a side or two. Delicious!

It's ok to have last minute things in the freezer for when life gets in the way, or other convenience foods when needed. I also try to batch cook things when I can, and I keep things like pizza dough in my freezer for simple meals when I don't feel well (my partner and teen can have fun making them together, and it's good to clean out the fridge with toppings) we learn how to make things easier over time.

Yes, absolutely! It does take time to get good at these things. I hope that when I’m older, I’ll have it all figured out 😅. For now, I just put one foot in front of the other. Some days are great, others not so much 😂

It is just me and my husband, but many times we cook extra just to put in the freezer for busy days. We also can a wide variety of foods. Every year I try to can something new, besides veggies. We have canned chili, (although we decided to leave out the burger and add it when we open a jar) homemade tomato soup and this year I'm canning asparagus soup.

That’s so great!! I’ve done some pressure canning, but definitely want to get into some of those meal items. I’ve done soup and spaghetti sauce. Both were excellent as a quick meal.

With the added responsibilities of homeschooling, editing, writing blog posts, and the never-ending to-do list that comes with being a content creator for me, mealtime has become quite a struggle for us. We avoid ready-made meals, but this idea sounds like a beautiful solution.❤ Love ❤️ the air fryer too!!!

I’m also trying to move towards mostly scratch cooking. It is tough as a full time WOHM, but it is worth it. Also, we are on a budget and convenience foods are pricey. We don’t eat animal products at all, so many convenience foods including pizza delivery are not an option for us. I’ll have to try my hand at homemade veggie pizzas!!! Thanks for sharing your tips😊

I totally understand. Up until about a year and a half ago, we were vegetarian for about 10 years. In the beginning, it was an exciting adventure and I made a lot of from scratch vegetarian meals. I also was a stay at home mom at that time, so I could do it. As time went on and I began working, I started to replace the from scratch food with junky processed food. Especially as more and more convenience foods that were meatless came on the market. It is so SO hard to cook from scratch when you work. It is a worthy endeavour, and a labour of love. But it is HARD!!!!

I make two or three meals at a time and put 2 or 3 in freezer. Meatloaf and casserole are easy meals to freeze. On a busy night can cook frozen if forgotten to pull out.

Oh that’s amazing!! I love Quebec, it is such a beautiful Province. My husband got to go home and take our son to meet all the relatives last summer. Funny enough, all of my extended family lives in Quebec too (on my mom and dad’s side). But I grew up here in B.C. so I never got close to my cousins or grandparents. But I’ve visited there three times ❤️

@@madmomma5331 That’s so interesting!! Because, no, I don’t speak fluently (but I can understand a lot), but I never realized that my mom had an accent. She grew up in an English household, in Quebec (they are all bilingual). I found out when we went to Quebec and met her family. They all had the same accent. I must have picked it up from her!! 😂

We make buckwheat pancakes often. Also known as ployes, they originated in Nova Scotia and later came to my home state of Maine. They are a French-Acadian flatbread. They are similar to both pancakes and crepes. Original ployes are low in calories, fat-free, sugar-free, lactose-free, and cholesterol free. Original ployes recipe is made using buckwheat flour, which is naturally gluten-free, and wheat flour. When making your own from scratch, you can use rice flour instead of wheat flour to have a gluten-free version. They are also low-carb for those looking for that option. Use them to make waffles, sandwiches, dumplings, and more! Although my recipe is much different than yours, I loved learning something new. Thank you for sharing another wonderful video!

Ployes (Buckwheat Pancakes) 2 cups buckwheat flour 1 cup all-purpose flour (use rice flour for gluten free version) 3 tsp. baking powder 1 tsp. salt 2 cups cold water 1 cup boiling water Mix dry ingredients, and then add cold water and mix well. Let mix stand 5 minutes before adding boiling water. Mix really well. As your batter sits, it will thicken up. If your batter is too thick, you can add just a bit of cold water. Place a cast iron skillet on medium heat. Get the pan nice and hot! This is KEY to making sure your ployes do not stick. Do not add butter or oil to the skillet! I like to use a 1/3 cup measuring cup to scoop my batter and pour onto a hot cast iron skillet. (Be sure to stir batter between uses) Spread your batter out thin, but not so much you see the pan through it. Let the ployes cook, adjusting heat accordingly. DO NOT FLIP! These will cook completely without flipping. I know this is hard and not typical, but ployes don't get flipped like pancakes. As they cook, you will see bubbles form on the surface. As those bubbles form, you will see when your ployes are done. Transfer to an oven safe dish and keep warm in the oven until you finish cooking the rest. These are truly a treat!! You will LOVE THEM! I use them in place of biscuits along side chicken stew. SO GOOD!!! You will never want biscuits with your chicken stew again. (smile) When our boys were little, I would butter them while still warm, then sprinkle a bit of cinnamon sugar on them, and roll them up into little logs. It was their favorite! Enjoy!

@@thefarmerswifecanada You're welcome! What we call buckwheat pancakes (Ployes) are a bit different. Your mother in law was probably accurate on where your recipe originated. Ployes date back to the early 1700's and originated in Nova Scotia. My mother's family are from Canada, so Ployes were a staple food in our home. Here in Northern Maine we actually have a day dedicated to Ployes. It's called the Ploye Festival. This festival holds the world record for the largest ploye ever made, which measures 12 feet in diameter. I was so excited to hear your say you were going to make buckwheat pancakes in your video! I had never heard anyone on youtube mention them before. Although they were not the Ploye we know and love, I was very happy to learn your recipe. I will be making these for my family soon! Thank you! (Edited to add: I will create a video on them so you can see how they are made)

I'm guilty of doing mostly freezer meals and refrigerator meals from Costco. I don't do a lot of fresh food. I tend to do what is easiest, and even then I sometimes don't have time to cook and my 13 year old daughter ends up heating up dinner for the family. I don't really enjoy cooking. However, I did make my first batch of yoghurt ever. It's now my daily brekkie. I actually found out that I like plain yoghurt. I never would have thought that. I am trying to get into the swing of making food from scratch, but it's hard. I have never really done so in my entire marriage.

Homemade yogurt is so good! That’s awesome that you are doing that. There are definitely times when I don’t enjoy cooking either. It comes in waves for me. Sometimes I’m super inspired, other times I don’t care and I just need to put something on the table. Food from scratch is a lot of hard work. But just trying one new thing makes it less overwhelming. The yogurt is a great step, and so healthy! ❤️

The homemade frozen pizzas are a great idea. I’m not a fan of frozen pizza but it’s good in a pinch but I dislike is to much I’d rather order pizza than eat frozen. However making your own frozen pizza is genius. I just wish I had more freezer space to do it.

Yes, I agree! I really dislike frozen pizza. I had just enough room for those pizzas in my freezer. I would much rather order in, which we do sometimes. It’s just the cost is so high with 5 of us, and the boys eat hard!!!!

Do you start the family eating the first pizza while the second one is cooking? I have five children and making homemade pizza in the oven is a challenge because you can only fit two in at a time.

Usually, when I make pizza in the oven, I make 2 large pizzas at once. I have big pizza pans, so I can make a big size. That is usually enough for us as a family of five, even when I have my older son over. Making a side salad can help too! I got my pans at a restaurant supply store, several years ago. They last a really long time.
