Thank you! 2 reasons for that. First, by transferring the milk into another jug, you are eliminating most of the bubbles produced during steaming. Second, upon steaming, the smaller jug is full with milk. It's easier for me to pour latte art by using a jug which is maximally 2/3 full with milk.

After using the steam, the temperature is too hot for puring an espresso. The buttons are flashing as long as the temperature is high for espresso. You can reduce the time of cooling down by performing "temperature Surfing ", that means pushing the middle button and opening the steam wand until no steam but water comes out.

This is not a common Delonghi Dedica as it is commercially available, but a modified one which, as you can see in this video, can produce a nice milk foam for Latte Art. For my first espresso in the morning I mostly use the bfc perfetta (this is not a Rocket...), the best single boiler ever...
