In winter we enjoy cabbage dishes here in Germany. In this video I will share with you 12 of my favourite German cabbages recipes and hopefully inspire you to cook some of those! My Nana was German and there are a lot of things that I never learned from her; particularly how to cook!and now that we’re in quarantine I desperately want to learn a lot of the German dishes that I ate growing up to share with my own children. I have never heard of boiled then baked cauliflower, Interesting . I'll have to tell my wife about that. My favorites are sauerkraut and red cabbage. Take care.

I like to make the same thing, but instead of the whole cauliflower I cut it into florets before I steam & then bake it. More surface area for buttery baked breadcrumbs. Ha! Sometimes I will sprinkle it with good-quality shaved Parmesan or Asiago cheese before finishing with the buttered breadcrumbs.

I love your videos! I grow collard greens or kale simmered in chicken stock and a big piece of pork fat. Kale is the heartiest and grows practically year round in my gardens. Greetings from the U.S.!

I love brussel sprouts sliced in half and roasted in the oven with olive oil and salt and pepper. They’re great with bacon! I’ve also had them with balsamic vinegar which was pretty yummy too!

Thank you for this video...I really look forward for each one. Our favorite soup is white cabbage or savoy cabbage, carrots, potato, turnip and onion cut in large-ish chunks, simmered until tender in Chicken Broth and seasoned with salt, white pepper and hot pepper flakes to taste. Also we like Napa cabbage stir fried with a savory sauce as a side dish. And of course cabbage salad shredded with carrots and white radish, tossed with a nice spicy vinegar dressing.

I make cabbage fried with butter and sugar, add wheat beer, (Weißbier) caraway seed (Kümmel) and some salt. I found this recipe on a a Bavarian Christmas show on Bayern TV.. I love this version of cabbage and eat it all year round. It goes great with any meat or sausage.

My grandma would fry red cabbage with apples, onions, vinegar and a little sugar. It was so good! I think maybe she fried it in bacon grease but it was so long ago I am not sure? As a kid, it was fun to eat because of the color.

Filling Kohlrabi-Leaves is some thing you should try its like filling cabbage but you net to leave a bit of the stemp on make it diagonale at the ent to pirce thrue the leave to hold it in plase and roste it like a cabbage roll

Usually once a week with my family we do eat Elsässer Sauerkraut (In french usually called Choucroute Garnie). It's served with sauerkraut in Alsatian white wine, pork chest, sausages being usually Frankfurter Wurst or Alsatian Knacks and of course potatoes. The side sauce will usually be mustard! :)

My favorite is a soup with kale (Grünkohl) Itallian sausage, and potatoes. Some people put in white beans (cannelini) but I prefer the potato. It's fast and easy.

Currently making my own sauerkraut. So far good fermenting. Also started to make fresh red cabbage with my pot roast. Didn’t know it was that awesome!! (Instapot recipe.). Love cabbage!!

Kohlrobi. Thinly round sliced with salt. Raw.Yum Brussell sprouts boiled. Also roasted with bacon. Boiled white cabbage with green pepper onions and carrots. Love this with buttered bread(Boiled dinner). Not the big fan of sweet sour cooked or raw. Love sauerkraut any way but favorite served with sausage and boiled potatoes. I'm of German and Finnish descent. Wisconsin to Alabama USA. Love your videos!

Lovely recipes. Thank you. My favorite way to prepare Brussels sprouts is to cut off the very end and then cut them in half lengthwise (north to south 'pole', not around the equator.) Then I place them cut-side down in a little olive oil and cook them until golden brown. When they are cooked on this side, I add some liquid (white wine, chicken stock, or mushroom stock) to deglaze the pan, toss the Brussels sprouts in the liquid, cover, lower the heat and cook down the broth until the Brussels sprouts are fork tender. Don't use too much liquid; just enough to boil away when they're done. Start with a quarter cup and only add more one or two tablespoons at a time until the Brussels sprouts are tender and have a nice golden glaze. Finish with salt, pepper, and one or two minced garlic cloves, tossing in the pan for a minute or two. Don't let the garlic burn or the dish will turn bitter. Just cook it until the glazed Brussels sprouts have a nice hint of roasted garlic.

For the dishes to be vegan they need some modifications, because we like putting butter, cream and bacon everywhere 🙈 but you can tell you friend to look for Swabian Potato Salad - the only proper German vegan dish I know. Hope that helps ;)

The tomato sauce variation is very Polish. And as far as I remember they also mix minced meat with rice, therefore they serve them without potatoes. I love Polish cabbage roll too 🤩

Three cabbages are my go to's are Wirsing, Rosenkohl, and Rotkohl. The Wirsing I prepare is chopped and cooked in butter til slightly crisp. The Rosenkohl is cut in halves, mixed with olive oil, salt, onion powder, pepper and bacon. It's roasted in the oven for 20 to 30 minutes. Rotkohl is cooked with apples but more Apple essig to give a more sour taste.

Southern greens and ham with kale in place of collards greens if collard greens are not available. Brussel sprouts sauted with bacon and topped with parmesan. Cauliflower mash with cheddar cheese and bacon and seasoned with garlic and chives. Cole slaw with a mayo dressing. Roasted or sauted cabbage. Corned beef or ham and cabbage boiled dinner. Bubble and squeak.

Wow! My mom was German and she would make kohlrabi whenever it was available-just boiled. I was not a picky chid but I just didn't like kohlrabi at all. I still don't care for it as an adult. If she had ever made it with a white sauce I think I might have liked it! I might have to try that. Thanks for sharing.

Great video! Savoy cabbage is original from Northern Italy (it's called cabbage of Milan or Lombard cabbage in many languages) and I read that in English it was called "Savoy" in honour of the former royal family of the Kingdom of Italy .. We Lombards use it in so many recipes (some are even dated back to the middle age)!

Ah, my favourite recipes is Cazzoeula, a traditional winter Lombard stew made the day after slaughtering the pig with all the parts of the animal that you could not turn into charcuterie (i.e. ribs, skin, trotters, ears) and tons of Savoy cabbage and served with hot polenta!

@@cooking-the-world Unluckily nowadays it's hard to find authentic Lombard food in Milan 😕 but in the countryside it's still relatively easy! Anyway, besides the mentioned Cazzoeula, the most delicious Lombard recipes with Savoy cabbage are: -Lombard cabbage soup (it's basically like French onion soup with Savoy cabbage instead of onions) -Pizzoccheri (buckwheat noodles with potatoes, Savoy cabbage and tons of mountain cheese and sage butter) -Risotto with Savoy cabbage (you basically add finely chopped Savoy cabbage and smoked ham (Schinken auf Deutsch) to cook into a plain risotto and some mountain cheese at the end) -Paniscia (a particular risotto made with Savoy cabbage, Lombard sausage and borlotti beans)

In the area of Pennsylvania where I am originally from we make stuffed cabbage with cannonball cabbage. We call stuffed cabbage Halupki. It is made with ground beef and ground pork. We lay the stuffed cabbage in sauerkraut and stewed tomatoes in a big pot. It is one of my favorite meals.

Everything looked so delicious 😋 I love cabbage in total, all of them. For kohlrabi i prefer the soup where you can use the whole cabbage and also the leaf's, very delicious mixed with some potatoes and caraway seeds. Kale and red cabbage with pieces of apple like my mom does are my favourites at Christmas time with a delicious roasted duck or chicken and some potato dumplings, it's so good and has a long tradition in our family. Cauliflower mixed with broccoli and a cream cheese sauce, almonds and onions and potatoes without meat. Cabbage rolls are the next i try to do.

Have you ever come across "Wirsingkohl", savoy cabbage? Its leaves are green, they are rippled or curly compared to white cabbage and the taste is stronger.

35 minutes at 400. If the Brussel sprouts are big, cut them in half. I like the small Brussel sprouts, there sweeter. Definitely turn the Brussel sprout. Enjoy

I do like some cabbage, but not every variety. White and red cabbage, Sauerkraut and Kohlrabi. Wirsing, Mangold, Rosenkohl, Grünkohl and spinach are some I avoid at all. Though I do like Red / white cabbage and Kohlrabi boiled, I do like them much more raw. Kohlrabi „as is“, red and white cabbage as a salad with onions, oil and vinegar. Sauerkraut can be eaten cold as is as well.

There are so-called pudding forms that good hardware shops have in stocks or know where to order them. They look like an ordinary baking form for a "Guggelhupf", that conical cake with that vertical hole in its center. But that form has a lid that shuts watertight. You fill it with whatever you want to cook in it, close the lid and put it into a larger pot with boiling water. That means that the food in the form cannot get overheated or burnt. So, you cut a cabbage into shreds, fry them shortly and boil them for a while to get a broth that you need for the gravy (just as you do with those cabbage rolls), take them out of the pan and start filling the form with a layer of cabbage first, then a layer of minced meat ( half pork, half beef), then a second layer of cabbage, another one of meat, till the form is full. How is the baby doing Marta? Btw, those wanting to shop for and do Marta's recipes, kohlrabi is called a German Turnip in the US. But a regular turnip can be used. Kassler is known as Canadian bacon (though not nearly as good usually as German Kassler). I like to do my kraut salat (cabbage but also sauerkraut) with a sour cream and yogurt sauce like German cucumber salad.

Oh thanks for the translations. This is really helpful because sometimes Inget stuck on translations for far too long. Oh Krautsalat - I am so glad that the winter ends, I love the salad with my Bratwurst 🤩 the baby is due in 5 weeks. It’s very exciting but also challenging, no wonder why woman in Germany stop working 6 weeks before giving birth. Hoe is that in US? Is there Mutterschutz for employees?

You're lucky to be in Germany with its social measures. Mutterschutz (as in what is present in Germany) pretty much doesn't exist in the US. Some companies have some. But, it's not mandatory. IMHO, Germany has the best healthcare and social care network I've seen in the hundreds of countries I've been to. (Btw, even though I live in the US, I'm retired on a German Beamten Pension.) Yes, translation can be difficult and quite perplexing at times. Even if only translating hausmacherwurst to home made sausage instead of home maker sausage. Other things, there just doesn't seem to be rhyme or reason. And, you need to have a very fluid, very technical knowledge of the topic you are translating, and that in both languages.

I am in the southern US and I’ve also seen it as kohlrabi but it’s pretty hard to find at most grocery stores.

Yes, southern US has a lot more turnip (kohlrabi) recipes than rest of US. But, it and celery root (both very common in Germany) are hard to find anywhere in the US.

⚪️👋 Hi CtW , My favourite way to prepare Cabbage is the Rodkohl inspired by You ( … Green Onions and Silvered Almonds on the side , Fresh Apple Slices on the side for Christmas Now ) 😊 Thank Yous . I like also doing A Cabbage n Cabbage side(s) withe warmed Sauerkraut , And a Slaw mix cooked withe Apple Cider Vinegar n a lil Sugar ( or withe Pomegranate Vinegar , Not requiring Sugar ) S + P . I like the contrast of taste too . And Vegan 🌱 Stuffed Cabbage withe two kinds of Cabbage , the Red Cabbage inside layer and the Green Cabbage 🥬 the outside layer , withe the slightly Tomato Sour sauce . Also Slaw withe Dried Cranberries , Candied Walnuts , Feta n Vinegrette . Ive been wanting to ask You because , I was a lil confused , and want to know if Its Traditional German , for during Christmas Eve Supper , to serve Onion Dip ( the Onion Soup Mix kind n Sour Creme , You usually serve withe Potato Chips ) withe Candied Ginger on Top ? Here in the U.S. I grew up eating cabbage (white) boiled in water with butter, salt and pepper til just tender. My favorite way to eat it. One year we traveled to Germany for the Christmas Markets and we stayed one week in Karlsruhe (probably didn’t spell it right). At their Christmas Market we got a cabbage dish they were selling there made in a huge shallow pan. It had white cabbage, bacon or ham, onions and Spaetzle. No sauce. Really good though. But I have never seen it made anywhere else nor what it’s even called. Do you know anything about this dish?

Hi Marta, rotkohl was always a favourite, made with speck, onions and apples. "Süs sauer" did I get that right? Grünkohl was always served with big chunks of pork, so tasty. My Oma and Mutti made lots of Sauerkraut, we used to eat it with bratwurst. I'm thinking about Kohlrabi, I'm not sure if I've had it but Oma used to preserve and jar something like that, though I always thought it was celeriac. Are they the same thing?

No, as far as a know. Celeriac (celery root?) is used here either as a soup vegetable, but also grated and stored in a jar. We use it for making side salads, with greater carrots, cucumber salad and some lettuce. I am not sure if it’s common to marinate kohlrabi in any way. But I might be wrong.

@@cooking-the-world Gern. :-) Ein traditionelles leider nicht. Vielleicht ist er in unseren Breitengraden einfach noch zu neu. Aber im Zweifel wäre ich für einen Auflauf oder für irgendwas, bei dem er als Beilage dient. Vielleicht wäre aber ein Salat am besten, denn Brokkoli gilt ja als sehr gesund (weshalb man die Vitamine schonen sollte).

Oh 🤩 I would cook it with chopped onion, chopped apple, lard, apple juice, apple vinegar, bay leaves, cloves salt and sugar. German Rotkohl should be on a sweeter side. But it’s totally up to you in the end :)

So, I just made it yesterday the way I made it for a video and I wasn't too happy with the curst. But I have a solution for that :) So, I cooked whole cauliflower (1,2 kg) in the salty water for 15 min. Then I drained it and put it into the casserole, brush it with 20g melted butter and coved the whole cauliflower with 3 tbsp breadcrumbs. Put it in the preheated oven (200 degrees C - full grill function) and left it there for 5 minutes. Then I would use 50g melted butter to cover the cauliflower once again and grilled it for another 10 minutes or until crust turns golden brown. The crust tastes the best if the breadcrumbs are properly soaked in butter:) I was thinking, maybe I should soak the breadcrumbs in melted butter before I brush it for the first time, but I am not sure if that will work. I will need to try it next time! And sorry for not replaying sooner, I was in the hospital for few days because the doctor discovered temporary drops in the baby's heart rate. Now we need to keep eye on him more often:)

@@cooking-the-world it is a soup that had polish kielbasa, potatoes, red cabbage, and sweet smoke paprik in a chicken stock. The red cabbage is sweet and soft as it boils. Heavy and filling..

Ahh found the recipe on chef smith's site but I first had it in Eastern Germany it is hungarian I guess. Called surpringly Hungarian cabbage sausage and potato soup. It has a sweet and sour taste to it. I used red cabbage when I made it. Really good.

Cabbage rolls are my favourite but I don't get it why German's bake or deep fry them, the taste of it become bitter. In Poland we prepare the same disch however cabbage rolls are usually cooked so at the end taste sweet. Tried once in Berlin but finished only the middle part another difference is that we use rice so it works perfect with tomatto souce.

Hey Aleksandra! Thanks, I am familiar with the polish cabbage rolls and I am sorry to hear you had such bad once in Berlin. I have never seen cabbage rolls that were fried. The method I know is called braising and if the cabbage rolls you had were bitter that means that somebody fried them to harshly, because they certainly shouldn't taste like that. I think you should give them another go when you get chance:)

I heard cabbage, pork, apple. It doesen't matter how you mix those three together. An American thing is pan fried pork chops, with apple sauce, mashed potatoes, and fried cabbage. Give just a little time, and I'll be a fatty.
