How I Meal Prep Soups & Storage Tips

I love to make big pots of soups because they're so easy to make and taste delicious. Here is what I do when I make a big pot of soup. This allows me to have quick and easy ready made meals during the week when I'm too busy to cook.

I like all of my containers to be the same size as it's easier to store and find.
That doesn't work for everyone, but it suits my needs the best for meal prepping.

I make 16 quarts of vegetable soup. For vegetable soup I boil pork neck bones for a few minutes and then simmer with the lid on for at least two hours. Then I remove them and add a pound of celery, two pounds carrots, a head of cabbage, four or five onions, a bunch of garlic, Brussel sprouts, broccoli, cauliflower, turnips and eight or nine washed and unpeeled potatoes. During the last 10-20 minutes of cooking I add spinach or kale. Don't forget about a half cup of good salt, such as Redman's. Salt is a great preservative. Then I use an immersion blender to blend it all. Extremely nutrient dense and flavorful. No need to cook for multiple weeks. Usually I cook rice in the rice maker to extend the life of the soup. 1/3 of the bowl with rice and the rest with soup. Cooked rice freezes well, too.

Doesn't the glass experience thermal shock when you put it into the microwave straight from the freezer? Or do you allow it to thaw for a while etc.

I usually let the meals defrost first before putting it into the microwave.

You didn’t say what kind of soup, unless I missed it...also do you put it in container hot?

So this particular soup that I cooked was a potato and kielbasa soup but you can do this technique with any kind of soup. Let the soup cool before putting it into your containers. It won't matter as much for glass, but it does for plastic. What I will sometimes do, if ALL of my containers are glass, I will parcel them out into the individual containers while the soup is hot, and let it cool in the glass containers. Since they're smaller portions, it'll cool faster. Then put the lids on, and store it in your fridge or freezer.
