There is no correct way to say it, it depends on the language you're speaking, and the variation. In England everyone pronounces it Gill o teen, in France it's Gee o teen, in America it seems to be a mix.

The Guillotine was best known for it's use in France during the French revolution and it was invented by Antoine Louis (French) with a German partner named Tobias Shmidt. Using the context of the language used it is only correct to say it as Gee o teen because in France the double LL makes that sounds just like it does in Spanish. You don't walk around saying Bella (beya) as Bella do you? No you don't just because it looks a certain way does not mean that's how it's supposed to be said.
