Tin mackerel run dung :
INGREDIENTS:
1 tin of jack mackerel
2 cups coconut milk 🥛 2Tbsp Cooking oil/ coconut oil. 1 tomato chopped 🍅 1 onion chopped 🧅 1/2 scotch bonnet pepper 🌶 2 stalks scallion chopped
1 small piece of thyme
2 pecks garlic chopped 🧄
2 small pieces of sweet peppers chopped 🌶 (this is optional)
5 pimento seeds
1/4 tsp of black pepper. METHOD:
1. Add 2 cups coconut milk to a sauce pan bring to a boil for about 4-5 minutes. 2. In a separate pan heat coconut oil or vegetable oil, add chopped garlic, onion scallion, sweet peppers, hotttt pepper, tomato, thyme & pimento seeds. Sauteed for about 3 minutes.
3. Add jack mackerel to sautéed seasoning, add black pepper & coconut milk stir over low flame for about 4-5 minutes.
Serving Suggestions: dumplings, yam & banana.
