Fantastic! I love the way you precook the tomatoes. This little tip really solves my problem, since I always cook my pie too moisture and nasty.

That looks so good! I'm going to try this crust, I hate when the bottom gets soggy and/ or the side cracks when cut. Would this recipe be enough to also make a top crust in a 9 inch pie pan or would it need to be doubled?

Can you make how to avoid grainy dulce de leche next because i don't like making dulce de leche out of condensed milk and everytime i make it from scratch it's gritty, grainy and become lumpy before it even caramelizes and it just go to waste, is there any tips and ingredients to use?, How to avoid or to fix it. I used whole milk and white granulated sugar only.

I saw another chef (cupcakes jemma) use egg white wash on the base with a brush to act as a sealant between the crust and the filling before she baked the crust. Can u test that plz?

I have the same recipe mine uses a little apple cider vinegar in the waterI think the egg helps. it rolls out easily without breaking and ripping apartWhen rolling out and placing in pie plate or as a top thrust

The only pie I ever have sog issues with is apple pie, especially in a glass pie plate. So I only make apple galettes now. Solved!

After removing the dough disc from the fridge, how long does one let it stand at room temperature before rolling? None of these videos state this wait time. I refuse to believe the dough would roll out that easily directly from the fridge as it's too solid. Thomas J -- thoughts????

Wait! He started off with a black tart pan, that did not have a release bottom, and ended with a silver tart pan with a release bottom. I hate when he does this switch up. Does it all the time, and discredits his believability.

@@tonytiger2450 Yes, different pan, but it still shrank as you would never cut the edges to be so low. He would have prepared this pan as he did the one in the first part of the video. At 10:10 you can see it is only 50% of the depth.
