Outback does not poke holes in their potatoes before cooking. I was the kitchen manager of an Outback for 6 years, and worked as a line cook for about 4 more. The potatoes are washed, allowed to air dry, spun about in a large pan with softened margarine (not butter). Once they are coated in margarine sprinkle kosher salt all over them and roll them about till everything's coated. No foil, place them directly on a metal sheet pan and into the oven.

Sounds great except for the margarine. Margarine is extremely bad for you. Was invented in a laboratory and heavily marketed to be healthier than real butter. The human body knows how to process butter. Understand that anything, including butter had to be consumed in moderation. But margarine is very bad. Look it up. It's cheaper to use in the restaurant business.

You are a man after my own heart. Never, I repeat, NEVER use foil. We (as in I) like the olive oil flavor but I just might try the butter for comparison. Well done my man!!

I made these last night for my in-laws. Usually we are lazy and just microwave them but we wanted to be good hosts. They turned out soooo delicious. Thank you so much. The only issue we had was the butter dripping and creating smoke. I put a pan on the rack under them and that fixed it. Thanks again!

It is a good idea to put a metal skewer through the potato as it will speed up cooking time making sure the inner temperature is high and the centre well cooked every time.

I just made one and followed your instructions exactly. It not only came out perfect but it was just as good if not better than a restaurant. I like to put butter, Parmesan grated cheese and Caesar dressing on mine. It was delightfully delicious 🤤

Foil wrapped on a potato is a steamed potato , no foil is a baked potato , I am 61 yr old Irishman, been cooking since I was 9 yr old, I know potatoes & eat them appx. 270-290 days a year , the other days are pasta or rice , but a starch everyday

To save time, I put a russet potato in the microwave, on high (no foil) for 5 minutes - then 30 minutes in the oven at 350 F.

Thanks for this! I’ve heard somewhere that poking holes on the potatoes would reduce the chances of them exploding???? But it’s good to see that it has other benefits.

Followed this (the poked holes)and had some really nice potatoes. Wasn't really crispy but had a nice soft texture. I cut the potatoes put cheese and cooked bacon and baked for an extra 8 mins.

I am going to try without the foil. I normally use foil and have never had any problems. Usual method I use is microwave, then foil wrapped, then unwrapped, so the last stage is specifically to crisp the skin. 3 stages can be a bit of a pain so I'm going to try just microwave then oven rack... I like the idea of letting the airflow circulate, thanks!

Butter contains water and can make the skin leathery. Olive oil needs to be applied after the skin drys some.

Let me offer this advice for someone that's cooked more than one potato. ALWAYS poke holes in your potato, if not they can literally explode in your oven. Now, the ones that don't explode are actually a little fluffier than holes poked, but it's not worth the cleanup. Just don't waste aluminum foil, you can always boil or microwave them if you don't care about fluffy on the inside/crispy skin.

poking the aluminum foil with thermo pen putting minute peices of foil in your potatoe sure makes them taste extra yummy

As I indicated in the video if you want to make the best restaurant style baked potato, you don't use foil. Besides why waste of foil? Mike
