I make my own skiving and leather trimming knives. I order blanks of high carbon tool steel, aneal it in a charcoal fire and then make the basic shape of the knife which is very simple. Then I heat treat and temper the steel using the claying method of Japanese smiths. I then use natural water stones to polish the steel to a mirror finish. This leaves a razor edge on the knife that rarely needs sharpening.
