Man I feel like I need to adjust all the time on the grill at work, I like a hot side med middle and medium lowish other side but the grill we have fluctuates so much.

On stainless steel, keep your strokes uniform and in one direction to prevent scratches from forming. But do the same steps.

I have usef Ecolab high temp cleaner and it did a great job of cleaning 4 yr old baked grill but i used 2 32oz bottles and took me like 2hrs to get it all cleaned

I also work at Chipotle, I tried it and it works amazingly. The only downside is that other grill closers don't really care about it's maintenance so it just gets caked up all over again. I recommend doing it twice or thrice if you want to get noticed for a promotion, otherwise don't be doing extra work for the same pay.

When I was working at Wendy's many years ago probably 20 LOL when I cooked on the grill after I was done I would have to clean it with a non-abrasive Brillo pad but before that I would use the scraper with lemonade from the fountain drink because the lemon juice would cut through it worked very very well but right now I'm trying to figure out how the hell to clean my griddle that outdoor it's a Blackstone and I don't like it looking burnt and old I want to make it look like brand new stainless again almost ready to take a wire wheel to it and sandpaper

A Blackstone or other consumer grade outdoor griddle isn't stainless steel and can't be cleaned the same way. Think of them as cast iron or carbon steel treat it the same way. It's very very difficult to rust stainless steel but you just have to leave your blackstone uncovered once in the rain to have it rust. I personally think most companies use cast iron style flat tops for consumer griddles because they don't need to be cleaned so thoroughly after every use. There are a ton of videos on how to properly clean a consumer griddle but mostly it just involves scraping off all the built up food, cleaning it with steam like in the above video and then wiping it down with food safe oil. Personally I'd bring the oil up to smoking point before shutting it down to prevent it from spoiling but that's just me.

Yeah that is fine. It’s a good oil to use to clean it as well as it normally has a higher smoking point then other oils. Just don’t splash it on your hands 🔥👍

Any type of COOKING OIL is fine. Not a necessary step but it does help "season" or "prime" the grill for the next use. Also gives it an extra little shine.

What brand us this grill? Can it work with propane? Are stainless steel tops better than a camp chef or Blackstone where it should stay black "seasoned"?

It’s preference. Unsure in regards to type. I like the stainless. Never a big fan of the seasoned ones. But I’ve had amazing food off both so 🤷‍♂️

How would this cleaning process work with a heavy use grill that is blackened all over? Can't see just the brick taking everything thing off without grill cleaner.

I worked in a diner where the two griddles would get nearly black by the end of the day. A grill brick got them back to looking like stainless steal easily. Though the method shown in the video is weird. It's better to do straight up and down motions and not the weird circle scrubbing in the video.

Not necessary. I think it does help for the next time you use it, and it makes it look more polished. The "brick" is commonly referred to as a GRILL BRICK

Try a restaurant supply store, Smart and Final, Costco, or whoever you purchase your food from. Most vendors have them.

one trick we learned at our restaurant for cleaning a very dirty grill top is using some pickle juice + grill brick. we buy pickles by the barrel so we have left over pickle juice 24/7. it will get the grill top looking brand spanking new but it does smell a bit during the cleaning.

Yeah I’ve heard of using acidic things like that lemon juice, and vinegar. Shoot I’ve even heard someone say to use sprite. In addition the smell can be potent.

Its known as a grill or griddle pad at my local Smart and Final. Its a thin metal sheet used for cleaning. Stacked with a nylon scrubber pad. And a "Griddle Screen Handle" also available at Smart and Final. Hope this helps. If not let me know and I'll do my best to assist.

Turn it off prior to cleaning. Can even add some ice on it to cool it off. I prefer cleaning it whiles it warm to hot as I think it easier, however I’ve heard both ways from many people.

George Oliger III any oil is fine. CANOLA, or any other VEGETABLE OIL will due. I wouldn’t use butter or olive oil as the smoking point is too low and could end up making it more difficult to clean

we are not allowed to use grill stone, though we have the non caustic grill cleaner it is similarly effective but doesnt give you a polished surface

I have another flattop here that I use and we do not use the brick on her. It’s a lot of scraping with a good sharp scraper. Then doing the steps here after bricking.

I would probably try steel wool too. Some of our installations do not allow us to clean with it so we don’t use em anywhere.

On break peace and quietness, quick efficient cleaning always keep it clean. Need a break for cleaning so busy with customers working I have my own restaurant cleaning need a break for cleaning take the break. Always restocked all products and materials always have freash meat im restocking products and materials is important. Freash meat is important for customers customers want their food ready quick and fast waiting not good for the customers. Restaurant fixing preparing food their is a time limited when serving the customers exchanging grease is important clean grease is also important. Taking out the grease is important when taking out grease also should be done in a timely manner emptying trash is important it should be done in a timly manner. The grease bucket never fill a grease bucket all the way to the rim because it becomes heavy to take out. Light is better the sink when sanitizer when letting out sanitize water open it up crack it slow. Working with lady clients when my team work together as a team cleaning becomes easy meet a client on break earlier never got upset in years. I signed a muti-billion dollar contract fast cleaning methods for Resturants. Yes, at the end I put oil on it. Not uber necessary, but puts a nice shine on it and seasons it for the next use.

Omar Banihamdan a different technique would be used. A couple different ways to go about it. I like to do it by 1)draining, and rinsing out oil 2)boil with degreaser and water mixture at highest possible fill point for 5-10 minutes 3)turn off and scrub with water in unit from step 2 4)rinse well and dry. This the short of how I would approach it.

It helps to “season” the grill which helps it not stick so much. And it really polishes it up so you see some spots you may have missed.

Scotch Brite and ice. No messy grill brick, no oily mess, just cool off with ice and scrub. Elbow grease gets it done in 5 minutes.

@@chefandrewbolding4147 i think you 'man of the people' types are exceptions. the more kitchen xp I got, the more I saw the inverse correlation between income and work. Dishies treated like unwashed peasants. Apprentice chefs leaned on to breaking point, line chefs injuring themselves at tri monthly intervals. Sous chef doing... a reasonable amount of work. Head chef mostly browsing personal emails in the office during peak traffic. Executive chef (why the F does this position exist???) Hardly even on the restaurant floor.

if youre a chef u knownu dont have enough time to scrub that for and hour 🤣 anyone here been using chemical after u just turned off? anyone experience inhaling it and or getting it in the skin? I scrubbed once before that I didnt wait for it to cooldown, chemical steam wiped off my hairskin.

Yes do not inhale chemicals 😂. Never great to do and always be safe when cleaning hot appliances. Some people also “don’t have time to workout”. Make time. Sometimes it’s the little things. When I worked in a kitchen we started off with a water scrub first and then the grill brick. The grill was still 350 degrees and everyone was able to scrub away fine with the steam hitting their hands and arms. It's hot and it does burn a little but nothing major. Just switch hands once it starts to hurt a little lol.
