How to cold smoke salmon and cold smoked cheese.
In this video I dry cure a side of salmon with a 50/50 salt and brown sugar cure, then cold smoke with silver birch smoke, I also smoke mild cheddar and mozzarella.

Cured and smoked my first 2 sides of salmon thanks to you with the information and help of your videos!!! Happy New year 😄👍 used Apple wood dust and smoked them for about 7 hours 100 % better than you can buy in the shops !

Hello, although there is a lot of recipes for cold smoked salmon I decided to follow your recipe and I have to say it is perfect. One thing I would may change is to add few hours of smoking. I had a quite tall piece so maybe it depends. Right now I am curing another piece which I seasoned with salt, sugar, dill and lemon peel (aka Gravlax recipe) so I will post the results. Mozzarella is perfect also It was more sucessfull among some people than the salmon;-)
